As you must have noticed by now, we love pizza here! It’s okay to be a pizza fiend. No, really, it is. It’s by far our favorite junk food Friday meal. Since I usually top ours with not all too much cheese, my own pizza sauce and add loads of fresh veggies, I’m not quite sure just how junky it still is. Or maybe I have a different perspective on what really constitutes junk food. I’ve tried lots of recipes over the years. What was even more depressing were all those times I couldn’t get the dough to rise no matter what I tried. Now, if you need me… I’ll be on the Stairmaster. Ingredients: 1 cup warm water 2 1/4 cup all-purpose flour 2 tsp instant yeast 2 tbsp honey 3 tbsp olive oil 1 1/2 tsp salt (2 tsp also works well) Directions: We’ll be needing yeast—I opted for instant yeast but feel free to use active dry yeast—salt and olive oil. You can either use your stand-mixer, food processor or hands for this. Add 2 tbsp honey. And add 1 cup warm water to it. Add the oil and 1 cup of flour.

Scrumptious Baked Cinnamon Breakfast Bites I love a good donut, especially a homemade one. What I don’t love is the pain associated with deep frying them. It is messy, time consuming and certainly more fattening. These baked Cinnamon Breakfast Bites mimic what I love about donut holes but without all the added stress and calories. Ingredients 1-1/3 cups all-purpose flour 1 cup crisp rice cereal, coarsely crushed 2 tablespoons plus 1/2 cup sugar, divided 3 teaspoons baking powder 1/2 teaspoon salt 1/4 cup butter-flavored shortening 1/2 cup milk 1 teaspoon ground cinnamon 1/4 cup butter, melted Directions Mix flour, crushed cereal, 2 tablespoons sugar, baking powder and salt in large bowl. Cut in shortening with pastry blender or fork until the mixture resembles coarse crumbs. Add milk and stir just until moistened. Roll dough into approximately 2 1/2 dozen 1 inch balls. Mix cinnamon and remaining sugar in a small bowl. Place balls onto greased 8 or 9 inch round pan.

Caramelized Onion & Prosciutto Pizza I had some leftover pizza dough (which is the best kind of pizza dough there is) in the fridge last night, so I whipped up this yummy—and exceedingly easy-to-make—pizza. Sweet, caramelized onions…salty prosciutto…beautiful fresh mozzarella. It all marries together in beautiful harmony. Let’s just say I cried, it made me so happy. Why does food make me cry? I’m pursuing this question in therapy. Here’s what you need… Yes, I misspelled “prosciutto” on the first go ’round. It happens sometimes. I’m pursing that in therapy, too. You also need one pizza crust, which is HALF of my pizza crust recipe. I’ve said it before and I’ll repeat: The pizza crust is better if you make it a day or two ahead of time! Basic Pizza Crust Back to the other ingredients: I love prosciutto. The first thing we’re going to do is caramelize the red onions. Throw in the onions, which need to be pretty thinly sliced. Sprinkle on some brown sugar so the onions will really caramelize. Sprinkle a little kosher salt on the dough…

Crispy Potato Roast Recipe Hey Guys! So…it’s still really hot out…wtf! I’m totally ready for fall…forget this, “I just don’t want summer to end” BS…I’m OVER IT! Remember when you were a kid and sleepovers were still the best thing ever? Red Velvet Crêpes I rolled my eyes at the red velvet cake trend, but now I can’t get enough. I’ll make any excuse to have ‘cake’ for breakfast– here’s my take on a classic. Red Velvet Crepes (Makes about 24, 8″ crepes) Ingredients: – 1 1/2 cups all-purpose flour - 1 teaspoon baking powder - 1/2 teaspoon baking soda - 1/4 teaspoon salt - 3 tablespoons sugar - 2 cups butter milk - 1 1/4 cup whole or lowfat milk - 1 large egg - 1 teaspoon vanilla extract - 1 1/2 tablespoons cocoa powder, sifted - 1 tablespoon red food color gel - 2 tablespoons unsalted butter, melted + 2 tablespoons cooking oil (for pan) *Update: Because the buttermilk lends to the acidity of this batter, do not substitute the baking soda for extra baking powder. If you add more baking powder, and omit the baking soda, you’ll end up with a heavy and dense crepe. Potato and Blue Cheese Pizza One of my biggest, deepest-darkest secrets is that a few times a year, I buy a frozen pizza. I used to do it on the sly, but lately I’ve even got so brazen that I’ll go out and do it in broad daylight. I am sure after my goings on about the popularity of frozen foods in France that I was going to get busted one day standing in line, clutching an icy box containing a pizza jambon speck, roquette, mozarella at the frozen foods store. Yet so far I’ve escaped detection. But it’s not the fin du monde and everyone has the right to enjoy a frozen pizza once in a while, right? (And we used to take home leftover pizza dough at the end of the night when I worked in the restaurant, so it was especially easy to roll ‘n bake a pizza on your day off.) I just got a copy of Serve Yourself by Joe Yonan, a nifty book full of recipes for cooking for one. Cheesy Chicken, Bacon and Avocado Quesadillas | Kevin & Amanda's... What is it about bacon & avocado that I absolutely love?? And these quesadillas… with their buttery, crispy, heavenly tortilla shells… are seriously yum. Don’t let the green scare ya, avocados have a really delicious taste. I promise they’re not just thrown in to “healthify” this recipe! ;) Quesadillas are one of our favorite quick and easy weeknight meals. Come on, let’s make these, you’ll love ‘em! Let’s start with the bacon. Now take about a tbsp of the bacon drippings and add to a skillet over medium heat. Add bite-sized pieces of chicken in a single layer, season with salt & pepper, and cook for about 5 mins or until chicken is golden and cooked through, flipping just once during cooking. Remove the chicken & scallions to a plate and rinse out the skillet. Then add a little butter over medium heat… And when foamy, add a tortilla and swirl it around to get it nice and buttery. Now we can start layering with the good stuff. Bacon. Avocado. Do you know how to pick out a good avocado?
