How long do i boil chicken breast? Boiled boneless chicken breast is about the worst way to cook chicken. It comes out dry and tasteless. It is mixed with mayonaise or some other sauces to make it palatable. But here goes: defrost the breasts (thaw them). Put in your pot and add enough water to reach halfway up the breasts. When it's done it is practically inedible without adding a cup of cold water mixed with 4 tablespoons of flour. Or cut it into cubes and use it for other recipes. The best way to cook chicken breasts is to leave them on the chicken with the skin. Strain out the vegetables and put the stock in the refrigerator over night to solidify the fat in the stock.
Election Day Bake Sale - Part 1 Today was the Election Day Bake Sale for Coco's 5th grade class. I don't know if I am glad there are TWO elections in our town this year because I am exhausted after the first! Even my mixer was tired! Inspired Entertaining: Homemade Flavored Sugar Cubes While working on another project this weekend, I noticed that one of my tubes of colored sugar had not been closed properly the last time it was used, and so the sugar had clumped a bit creating sparkly green lumps. That immediately got me thinking--how fun would it be to make my own colored sugar cubes?! I immediately pulled out a bowl and started mixing sugar with food coloring and small amounts of water, then packing and cutting them into squares with a long knife. After 20 minutes or so of drying, I was left with gorgeous little sugar cubes in an irresistible shade of pink. I then went one step further, replacing part of the tap water I'd used with rosewater, and repeating the rest of the process to create rose-scented sugar cubes. I brewed a cup of tea and dropped in a cube to test it--it melted gently just like a store-bought sugar cube and added a subtle rose flavor to the tea. I made batch after batch, using orange blossom water, and then Meyer lemon juice (with yellow extract).
Deep Dish Fruit Pizza My sister-in-law Missy first introduced me to the concept of fruit pizza years and years ago, and here’s how: she brought one to my house and I proceeded to eat the whole thing. But it was small. And I was nursing. My mammary glands made me do it. I whipped up a whopper of a fruit pizza a couple of weeks ago using my good ol’ standby sugar cookie recipe…and it was so darn good in such a naughty, naughty way. Feel free to halve the recipe below and press into a smaller pan, or just split the full recipe in half and roll out two thinner pizzas. This is one of those fun, throw-together treats that’s perfect for everything from a slumber party to a baby shower. Sorry I said mammary glands. The Cast of Characters: my sugar cookie dough (recipe below), marshmallow creme, cream cheese, peaches, kiwi, blueberries…and whatever other fruit you’d like! Now, you could divide the dough in half, then roll out each half into thin, round pizzas. Or you could do what I done did… I love this pebbly texture.
Pumpkin Muffins Back to school means cooking for myself again. I've been pinning all kinds of recipes to my "yum" board in preparation. This one was first on my list. There's only two ingredients. That's right, just the cake mix and the pumpkin (15 oz.). No oil, no eggs, no water, nothing else. It felt kind of strange not to add any liquids to the mix but it came together nicely into a thick batter. Bake at 350 degrees for 20-25 minutes. Add a dusting of powdered sugar, or better yet some homemade cream cheese frosting for added awesomeness. Yum! *Update* Made these with chocolate mix too.
Snickerdoodle Muffins I have been obsessed with Pinterest lately! Pinning this and that all while trying not to drool all over my computer. While I like pinning lots of different things, as you can imagine, I love pinning recipes. A picture of snickerdoodle muffins kept popping up all over my Pinterest page just begging me to make them. Could it be, one of my favorite cookies in a breakfast treat? These muffins made the best late-night snack I have had in a while! I really need to stop looking at Pinterest after dinner! The dough is very soft, so when you drop some into the cinnamon-sugar mixture you want to spoon some of the mixture over the dough before you start rolling it. This way your fingers never touch the sticky dough and you don’t end up with snickerdoodle batter all over your fingers.
