Making Miniature Stuffed Pizzas in Springforms

Making Miniature Stuffed Pizzas in Springforms
Stuffed pizzas are a Chicagoan delicacy consisting of layers of cheese and fillings above– and below– a thin pizza crust. One of the best ways to bake them is in a springform pan, so that the sides come out in perfect cylinders and come out easily. Taken to the small extreme, individual-sized stuffed pizzas are the ideal portable food to take to work for lunch. Made in miniature springform pans, they are compact, cute, tasty, filling, and are almost guaranteed to make your co-workers jealous. Read on and we’ll show you how to make your own springform stuffed pizza, in any size you like. The common wisdom on making stuffed pizza is that it should be made in a “deep dish pizza pan,” which is nothing more than an overgrown (wide) cylindrical cake pan. Finally we got a little bit smart about this and used other kitchen gadgets to solve this problem: springform pans. We serve the large one immediately (for dinner), and save the smaller ones for lunches over the next few days.

Sea Salt & Gourmet Salts - Guide | SaltWorks Also known as: Sal del Mar, Sel de Mer, Sale Marino Sea salt is a broad term that generally refers to unrefined salt derived directly from a living ocean or sea. It is harvested through channeling ocean water into large clay trays and allowing the sun and wind to evaporate it naturally. Manufacturers of sea salt typically do not refine sea salt as much as other kinds of processed salt, so it still contains natural traces of other minerals, including iron, magnesium, calcium, potassium, manganese, zinc, and iodine. Proponents of sea salt rave about its bright, pure, clean flavor, and about the subtleties left by trace minerals. Some of the most common sources for sea salt include the Mediterranean Sea, the North Sea, and the Atlantic Ocean (particularly in France, on the coast of Brittany).

Oven-Fried Onion Rings … Intro … and a killer pickled garlic scape tartar sauce – if I do say so myself. I’m not one to shy away from fried foods. Fried foods are notorious for producing an enormous mess. But when I became the proud owner of three Walla Walla onions so fresh the dirt was still attached – my first thought was onion rings. In order to avoid the mess I set out to make oven-fried onion rings. If you, like me, love the grease but hate the mess then let us celebrate in the name of laziness for a recipe that takes more time to clean the grease off our fingers than off our counters. Oven-Fried Onion Rings 2 medium onions (sweet or yellow) cut into 1/2 – inch rings 1/4 cup all-purpose flour 1/2 tsp. salt 1/4 tsp. black pepper 1/4 tsp cayenne 1/2 cup buttermilk or plain yogurt 1 egg 1/4 cup + 1 tbl. flour 1 1/2 cups finely crushed potato chips (I highly recommend Kettle chips if you can find them) 3 tbl. vegetable oil Pre-heat your oven to 450* Have all your ingredients nearby to minimize the mess. Serve with …

Microwave Potato Chips — Really! I like to think of myself as a glass-half-full kind of gal. I tend to have a sunny demeanor. I try to accentuate the positive even in the most grave of situations. And I’m optimistic that one can do anything one sets one’s mind to — or at the very least get darn close to it. But when I stumbled upon a recipe early last year in Eating Well magazine for making potato chips in the microwave, I balked. I was wrong. As part of the Reheat Anything Generation, I knew full well from experience that foods heated or cooked in the microwave most often turned out soft and limp, not crunchy. So how could thinly sliced potatoes end up crackling crisp? They not only do, but they also possess a purity of flavor — of real, fresh potatoes. Plus, there’s no heating up a vat of oil or turning on a hot oven to make these. The recipe calls for cutting up the potatoes into 1/8-inch slices. Toss with olive oil, and salt. I’m still a glass-half-full gal. Microwave Potato Chips (makes 4 servings, 12-14 chips each)

Better Than Takeout Orange Chicken Yesterday as I stood in the kitchen trying to figure out what to make for dinner I wondered to myself, how do those people do it on those shows where they are given random ingredients and are suppose come up with something genius. I think I stood there for a solid 20 minutes looking in the cupboards and staring into the freezer hoping that I would be struck by some ingenious idea. Then I saw the oranges, and it hit me “O-raang Shh-ikun”….that is orange chicken if you can’t understand the accent. I love orange chicken, and I almost always order # 14 Orange Chicken when we order Chinese take out and I wondered to myself if I could make it better at home. This recipe most definitely delivered! Pepperoni Pizza Puffs Recipe TGIF, friends. Hope that you all have had a lovely week, and that a relaxing weekend lies ahead. I’m looking forward to some friend’s-birthday-celebrating, farmers-marketing, coffee-(friends)-dating, cake-baking, church-enjoying, and sleeping-inning here in my little corner of the world this weekend. OH, and the thing I’m perhaps most excited about — choir-directing. Did I mention on here that I’m leading an Easter choir at my church?! I’m kind of over the moon about it. Anyway, warm wishes coming your way for a good weekend ahead. Read more Ever since my friends and I met for a tapas happy hour at our neighborhood Spanish restaurant a few weeks ago, I’ve had sangria on my mind. So of course, when I found myself in the fruit section at the market this week trying to decide what kind of sangria to make for our weekly neighbor night, I immediately thought of sangria. …oh good grief, why had I never thought of this before? Sangria with All The Colors. The only reasonable solution, of course. ;)
