
Creamed Swiss Chard - Swiss Chard With Creamy Sauce Bacon, garlic, and a little onion add flavor to this dish of Swiss chard. Swiss chard has long been one of my favorite vegetables, because it's a tasty and nutritious green vegetable, and it's so easy to grow. Here's a large photo. Ingredients: 2 bunches, about 2 pounds, Swiss chard, white ribbed or a mixture of colors (rainbow, red, yellow)3 or 4 slices bacon, diced1 clove garlic, mashed and finely minced1/4 to 1/2 cup finely chopped red onion2 tablespoons butter2 tablespoons flour1 cup half-and-half or whole milkpinch nutmegsalt and pepper, to taste Preparation: Wash chard and cut off thicker stems. In a medium saucepan over medium heat, cook the diced bacon until crisp; remove and set aside. In a saucepan over medium heat, melt butter. Add about 1/2 of the sauce to the chard, stirring to blend. Sex in a Pan Sex in a Pan – crazy name for a dessert, but it’s one of the best desserts you’ll ever have, it’s mostly a pudding dessert with a crunchy pecan bottom crust. Don’t laugh at the name of this dessert! OK, you can laugh, it is funny. I have no idea why it’s called sex in a pan, maybe because it’s so good. Oh my God, it was unbelievable. I was in love, I had never had anything like it before. Here’s what the layers look like. I just had to share this wonderful dessert with you. Update: Since I originally wrote this post, I’ve made sex in a pan numerous time since it’s a favorite at my house. Chicken Spaghetti Casserole Chicken Spaghetti Casserole When I asked Facebook fans the other day about the possibility of me posting a new casserole recipe, I received an overwhelming response. It seems that there are a lot of casserole-lovers out there! I live in San Diego- not really the Casserole Capital of America. People here eat grilled chicken, tofu hot dogs and salad with no dressing. This is quite the cheesy casserole, and I mean that in a good way. Here’s what you’ll need for this recipe. Boil the pasta, just so it’s kinda al dente (still has a slight bite to it). Melt 1 tablespoon of butter in a pan. Cook the veggies in that melted butter, just until they’re a little bit softened up. Mix nonfat milk with fat-free cream of mushroom soup. Pour that sauce into the veggies. Mix it up. Add cheese. It melts into the sauce nicely. Mix in chopped, cooked chicken and the pasta. Add some tabasco for flavah. Pour it into a greased baking dish. It looks purdy, don’t it? More cheese. Sprinkle it on the top.
S’mores Cookies Yesterday was busy with swimming, BBQing, and relaxing. My Laundry Monday turned into Laundry Tuesday topped with an additional load of damp swimming towels. Being the good parents we are we counted swimming as baths for the kids and sent them to bed smelling of sunblock. Then as I snuggled on the couch to write a post about these cookies I brought to our BBQ I just…could not…keep…my eyes…open. These S’mores Cookies are a perfect hello to summer. These cookies have a graham cracker base with a chocolate chip cookie sprinkled with chocolate and marshmallows topping it. Ingredients 11 Tablespoons unsalted butter, softened 1 cup brown sugar, packed ½ cup granulated sugar 2 large eggs 1 teaspoon vanilla 1 teaspoon baking soda ½ teaspoon sea salt (optional) 1 teaspoon cinnamon 2 ½ cups flour 1/2 cup semi-sweet chocolate chips 1 cup mini marshmallows 3 regular sized Hershey’s bars, broken into pieces 1-2 packages graham crackers, broken into squares Instructions Notes

Spaghetti Sauce A-spaghetti without a-cheese is like a-kiss without a-squeeze! An Italian waiter at Sardi’s in New York City said that to me when I was a little girl. It stuck. A-spaghetti without a-cheese is like a-kiss without a-squeeze, and spaghetti without good sauce is like…well, limp, hopeless noodles. This spaghetti sauce…is good sauce, my friends. It’s rich, meaty, a cinch to make, and it can be frozen and used on spaghetti, in lasagna, on top of garlic bread, or over the top of ricotta-stuffed pasta shells. And it can be made in bulk and frozen, which makes me love it even more. *Shudder* The Cast of Characters: Ground Beef (I used ground round), garlic, onion, green bell pepper, crushed tomatoes, tomato paste, Parmesan cheese (not pictured), bay leaf, ground thyme, ground oregano, salt, pepper… and a mystery ingredient that’s either going to make you laugh or curse my name.
