Splash some vodka in there if you want to take tomorrow off too. 3 pounds of watermelon (seedless is best but some seeds are cool) ½ cup skinned, chopped cucumber juice from 1 lime (about 2 tablespoons) 8-10 fresh mint leaves ¾ cup coconut or tap water 1 teaspoon agave, maple syrup, or honey (optional) Cut away the rind and chop up the watermelon flesh into pieces no larger than a quarter. When the watermelon chunks are frozen add them along with the cucumber, lime juice, mint leaves, and water to a blender and blend until it is all smooth and icy. Had a rough day? Makes about 2 ½ cups of sweet summer slush, enough for 2 people who need to chill the fuck out.

Hash Brown Wrapped Eggs It's been hard for me to switch gears from the whole "Stuffed" concept. It's too late to get this guy into the book, so here it is, Stuffed DVD special features! This is a play on a scotch egg, but also a Peruvian dish called papas rellenas. The key is perfectly soft boiling the eggs so that the yolk stays soft and comes running out when you cut into it. Roast the potatoes until tender. Mix with some flour, salt, herbs, and spices. Soft boil some eggs using this method. The potato mixture is mashed and ready. With well floured hands and surface, spread out some potato and roll it around your egg. Perfect. Fry em up until browned all around. Just another potato... With a suprise inside! Wait for it... Pop a little sriracha on this thing and it will be the best breakfast you have had in months!

Crack the eggs and separate the white from the yolk. Comnbine egg whites with tomato, spring onion, salt and pepper. Place some mixture in each hole. Gently top with yolk. Bacon Guacamole Grilled Cheese Sandwich A guacamole grilled cheese sandwich has been on my to try list for a while now and since I was making the bacon guacamole on the weekend I figured I would just pick up double the ingredients and make both. The basic idea behind this grilled cheese is quite simple and it started out with just adding guacamole to a grilled cheese but with the success of combining salty bacon-y magnificence with cool and creamy guacamole I could not resist adding a few slices of bacon to the sandwich. I also had some leftover corn tortilla chips from dipping on the weekend so I decided to crumble a few of them and add them to the sandwich for texture. Like all grilled cheese sandwiches this one is pretty easy to make though you want to try to remember to pull the guacamole out of the fridge early so that it can come up to room temperature before adding it to the sandwich. Skinny Mashed Potatoes Mashed potatoes are one of my favorite things to eat on Thanksgiving, but this year since I am pregnant and on a really strict low carb diet (for my diabetes) real mashed potatoes are out (bummer). I recently started researching alternatives to some of my favorite dishes because there is NO way my plate will be without a big ole pile of mash potatoes. I came across this recipe that uses cauliflower instead of potatoes. Hmmm not a big cauliflower fan so I wasn't sure. If there is a choice of either celery or cauliflower in a veggie dish 9 times out of 10 I will choose the celery. ***BEST MOCK mashed potatoes I have ever had! What you will need: 1 head of cauliflower 1 tablespoon of cream cheese1/4 cup grated Parmesan cheese1/2 teaspoon of minced garlic1/2 teaspoon of salt5 or so dashes of pepperChives for garnish Directions:Wash and cut cauliflower into small pieces. Avocado Habanero Hot Sauce In a continuing effort to press the limits of what defines guacamole, I present to you this hot sauce. Based on the Venezuelan sauce known by the silly name "guasacaca", this condiment is loaded with avocado, habanero peppers, and red wine vinegar. There is lots of acid in the recipe, so unlike a traditional guac, it won't go brown 5 minutes after you make it. I love no-cook sauces. I poured it all into this jar to save in the fridge for later. Except for what I was using right away! This had a nice little burn to it, and the vinegar was perfect in this taco. Besides the sauce, It's just some chopped radish and onion, a little cheese, and some coffee braised beef, a recipe I have been working on for a burrito shop in the area. These tacos hit the spot, and I have to say that the guasacaca is one of the main reasons why. 2 avocados, a lime, a cup of red wine vinegar, a handful of cilantro, a clove of garlic, 5 habaneros- seeds removed, half a red onion, and lots of salt and pepper.
