
Top 25 Skinny Recipes 2012 As we come to the year's end, I can't help but reflect on the highs and lows of 2012, and try to imagine what 2013 will bring. Today is a gift we should grasp with both hands, and remember that our faith, family, health, our home sweet homes, and the food on our table are all we really need; everything else in life is a bonus! But looking back, there were lots of Skinnytaste highlights this year, the top of the list was a book deal with Clarkson Potter – woohoo!!! I can't express how grateful and thankful I am for all of your support. Remember how we used to love spaghetti or lasagna with a side of garlic bread? 6 oz regular cream cheese (170 g) 6 oz finely grated Monterey Jack (170 g) cheese 2 large eggs 1 tbsp whipping cream, OR milk (15 mL) 1 tsp baking powder (5 mL) 1/4 tsp granulated garlic, OR (1 mL) garlic powder 1/4 tsp salt (1 mL) Garlic Butter Topping: 2 tbsp butter, melted (30 mL) 1/2 tsp Italian seasoning (2 mL) 1/2 cup grated Monterey Jack cheese (125 mL) In food processor with sharp blade or blender, process cream cheese until smooth. Turn batter out into 9 x 13-inch (23 x 33 cm) glass baking dish and press down evenly, using plastic wrap, to make things easier. Garlic Butter Topping: In small bowl, combine butter, Italian seasoning, granulated garlic, OR garlic powder. Helpful Hints: You can play with this recipe. COCONUT CUPCAKES WITH DELICIOUS BUTTERCREAM FROSTING If you love coconut and you love the added fiber in something that is otherwise a decadent, beautiful and sweet treat, then you’ll like this. Keep in mind though that not everyone likes coconut. Cupcakes are all the rage at the moment. 1 tbsp baking powder (15 ml) 1/4 tsp xanthan gum (1 mL) 1/4 cup coconut oil (60 mL) 2 tbsp butter, softened (30 mL) 6 eggs sugar 1/2 cup sour cream (125 mL) 2 tbsp whipping cream (30 mL) 1 tsp vanilla extract (5 mL) 1/2 tsp coconut extract (2 mL) 1 cup unsweetened desiccated coconut (250 mL) Toasted coconut for garnish, optional Buttercream Frosting (see recipe below) Preheat oven to 350°F (180°C). In large bowl of mixer, combine Gluten-Free Bake Mix 2, baking powder and xanthan gum; mix well on low speed. However, this taco chicken chili is definitely a meal that I make throughout the year. Seriously, I don’t think it’s possible. Every time I make this taco chicken chili, I make it differently. “Well, let’s try chipotle-flavored diced tomatoes with garlic-flavored diced tomatoes. Okay too far.
