Perfect Iced Coffee & ~ Mary ~ Aaaahhh summer! We are back in its suffocating grip, when the only thing that brings comfort is something cold. I mostly like the A/C and get fussy when John suggests we go somewhere. That means I have to actually go outside and experience the misery. Here’s a recipe for iced coffee that’s PERFECT in every way. Brew a FULL pot of coffee. Fill a couple of ice cube trays with coffee. Leave the rest of the pot of coffee on counter to cool then store in fridge. When you’re ready, fill a glass with your coffee ice cubes. Pour 2/3 rds full with coffee and the rest with milk of your choice. Pour in your milk or cream of choice. Put in sweetner of choice – it usually takes double the amount you use, only because you’re probably using a larger glass than your normal coffee mug. Give it a good stir. If you’re feeling sassy put in a straw and ENJOY! I will usually make another pot of coffee in the morning, because it’s what I always do in the morning, that way I’m ready to go the next day.

Quiche with a Perfect Crust « ~ Katy ~ Mom (Patty) taught Mary and I how to make the perfect, most flakey pie crusts. The first trick is to use milk instead of water. The second is to use very little of it. This is a bonus post because there’s a Brunch theme for the Monthly Mingle over at What’s for Lunch Honey . Perfect Crust for one 9” pie plate 1 cup + 2 Tbsp flour, sifted 1/2 teaspoon salt 1/3 cup butter 3-4 tablespoons milk Combine the flour and salt. Cut off excess (about 2” from edge of plate), fold 1” under and flute the edges with your fingers. Quiche 1/3 cup onion, chopped 1 tablespoon butter ¼ pound Swiss cheese 4 eggs 2 cups light cream 1-1.5 cups broccoli, chopped and lightly steamed Saute the onion in the butter Cube the cheese and place on the bottom of the pie crust Mix the eggs and the cream together (I find that I need less liquid when making a quiche, so you may want to see what works best for you), add the sautéed onion and pour into the pie crust. Johnny Cakes « ~ Mary ~ Golden, crispy, buttery discs. Just in time for the weekend. Got this one from Two for the Road but, as always, like the Joy of Cookings recipe better. Do not mistake this for the Johnny Cake Fred’s house keeper used to make when he lived in Trinidad & Tobago. These are very straight forward and easy to make. Johnny Cakes Combine in large bowl: 1/2 tsp Salt 2 tsp Sugar Pour Over while stirring 2 ¼ Cups Boiling Water Let sit 10 min. Heat skillet over med-low heat with 1-2 Tbsp Butter.
