Treats: Battenberg Cake Reading about all the Queen's Diamond Jubilee celebrations this week inspired me to make a quintessential British dessert. Ironically enough the origins of Battenberg Cake are actually German. Pastry chefs in the court of Queen Victoria, herself of German ancestry, created the marzipan covered sponge to celebrate the wedding of Victoria's namesake granddaughter, Princess Victoria of Hesse and by Rhine, to Prince Louis of Battenberg. In all the times that I've visited England I never actually tasted Battenberg cake but knew of it, especially because of the pink checkerboard design. How cute would it be at afternoon tea or a bridal or baby shower? The recipe can be found here from the BBC website. On another note..... Then again I’ve never met a batch of cake batter, brownie batter, or cookie dough that I didn’t love to snag a few tastes of. Plus, it’s summer and it’s hot. And I’d rather drink my cake than turn on the oven and bake one. Have your cake and eat it, too. Have your cake and drink it, too. But it really doesn’t have to be summer to drink cake batter. Cake batter is a food, or drink, for all seasons. There’s a generous scoop of ice cream and a cup of whole milk in the milkshake making it plenty creamy and very rich. Gather your all-star lineup of ingredients. You could likely use cocoa powder, granulated sugar, and flour in proper ratios totaling one-half cup to approximate cake mix (see recipe notes) instead of using actual cake mix. There are a bit like my Brownie Covered Oreo’s from last Christmas but enhanced with layers of peanut butter and a double decker stack of Oreos in each little brownie cake. I know not everyone has a Trader Joes near by, however if you do, get a load of their ready to pour baking mix. Break out 24 Oreo Cookies. Some of your favorite peanut butter. Spread a teaspoon of peanut butter over Oreo #1. Press a second Oreo right on top One more teaspoon right on top. Place the little stack right into a cupcake lined muffin cup. Who could resist cream-filled chocolate sandwich cookies? Not Me! Especially the double-stuffed Oreo cookie, it’s one of the best cookies for dunking into a cold glass of milk. I went out yesterday to do my weekly shop, came home, and before I was able to bring in the first grocery bag Matt was hunting for the cookies and cream ice cream. One of Matt’s favourite desserts of all time is cherry cheesecake and I thought to myself why not Oreo Cookies and Cream Cheesecakes, that should satisfy his craving. Plus these cheesecakes are super easy to prepare, everything comes together in one bowl and there’s no crushing chocolate wafers with a rolling pin, then melting butter, baking the crust first and then baking a second time when filled. Drop an Oreo cookie into each muffin tin, make filling, add chopped cookies, bake, and enjoy, how easy is that?
A Blast From the Past I’m just finishing up the photos for my next recipe, but since we’re entering into flowery, lovely springtime, I wanted to bring this quick and easy—and too precious for color TV—dessert idea from my archives. I first posted it back in 2007 as I was making my way through a little recipe book I used in high school, and my girls plan to make some this weekend. I expect you to have a freezerful of these delights by 5:00 this evening. Back on the golf course, I used to have a traditional back-to-school party for my friends and me every year. Because I apparently had nothing better to do with my time and focus, I’d have Cranes invitations printed, would dress in my finest floral dress or suit, and welcome 15-30 girls into my parents’ house, where we’d all toast one another with sparkling grape juice and feast on chicken salad with dill and baked brie and things like that. Anyway, for the party after my sophomore year, I made these delightfully fun little flower pot desserts. But hey! (Oooh!
EDDIE ROSS - Pink Ombre Cake Here's a cake sure to sweeten up the Valentines in your life. Pick up three boxes of your favorite white cake mix—or work from scratch if you have the time—along with a bottle of Wilton's Icing Color in petal pink. Split each box into two batches for a total of six, then add increasing amounts of dye little by little until you achieve the ombre effect. For the outside of the cake, I used a piping bag fit with a basketweave tip. Happy baking, everyone!
Make Your Chocolate Butterflies Decorate your cupcakes, cakes and much more! You want to keep your tiny artwork inside the freezer before you will need to use them, and try no to handle them any more than necessary. They crack without difficulty, particularly if they’re thin or large. Press all the chocolate into the corner of the bag and draw your butterfly on the parchment paper, with the crease as a guide for the centre of the butterfly’s body. Begin with drawing a stick in that crease, adding wings on either side. Try for symmetry, do not worry a lot. Carefully lift your parchment and set up it in your folded card stock, lining up the crease in the paper with the fold in the card stock. Set the butterflies inside the freezer to harden.
