A lot of cake's that I have experimented with before are like a vanilla cake with bits of Oreo in them, which didn't really give them enough Oreo flavor. But these were a lot better. I used a dark chocolate fudge cake mix instead of just a regular chocolate cake mix, which went really well with the cookies and gave the cakes just a little more flavor. So, in this recipe there is Oreo's in the cake, in the frosting, and at the bottom is a Oreo surprise. Ingredients 1 package Oreo Cookies, regular size 1 package Mini Oreo Cookies, for decoration (optional) 1 package chocolate cake mix (mix according to directions on box) 8 ounces cream cheese, room temperature 1/2 cup butter (1 stick), room temperature 3 3/4 cups powdered sugar 1 teaspoon vanilla extract cupcake liners Preheat oven to 350 degrees. Cream together butter and cream cheese. foodsnots.com

Peanut Butter and Jelly Cupcakes Recipe From decadent Peanut Butter Trifles to Amber’s Peanut Butter Snickeroos, I filled up the week with pure peanut butter goodness, so I knew I had to wrap up the week with something extra special. The idea for Peanut Butter and Jelly Cupcakes has been filed away in my recipe notebook for months just waiting to debut in spectacular style. I have forever been a fan of peanut butter and jelly sandwiches, especially when fluffy white bread is involved. I get on food kicks a lot, meaning I’ll eat the same thing over and over again until I simply can’t stand the thought of it, but somehow, I never tire of PB&J sandwiches and I often eat them for dinner when Brian works late… sometimes I even get fancy and actually toast the bread! There is something very whimsical and nostalgic about these cupcakes that take me back to being a kid and noshing on PB&J sandwiches and Fruit Roll-Ups. If you enjoyed this recipe, you may like...

Coconut Cupcakes Well, I made it through my first week back to work. And let me tell ya, hanging out in a second floor classroom while the temps soared to the mid-nineties had me begging for fall temperatures or a rather large air conditioning unit. Much like my students, I get cranky when I’m hot, so the thought of turning on the oven after work was not happening. In fact, I really didn’t do much baking or cooking at all last week – I just kind of adjusted to being awake at ridiculous o’clock and also got caught up on episodes of Big Brother. Stop judging me! It’s become a little bit of a guilty pleasure and I kinda think Frank is adorable. Since I slacked all week, I decided to use my time wisely this weekend and whipped up a last couple of summery desserts. After a quick scan of the fridge and pantry, I realized that not only did I not bake last week, but I was also lacking in the whole grocery shopping department. The cakes are made simply, with my favorite Doctored Up Cake Mix recipe.
Chocolate Chip Cookie Dough Truffles | annie's cooking lab Last weekend a friend I decided to neglect our school work and go for a hike in the snow followed by dinner and a movie at my house. I had all the ingredients on hand for some tasty Corn and Cheese Chowder which was perfect way to warm up after a cold hike. My friend said she’d be in charge of bringing ingredients for us to make dessert and I was so excited to see that she’d picked out these truffles! Eating the cookie dough is usually one of the best parts of making cookies, but then you feel bad because you’re supposed to be making cookies- not snacking on the dough! These cute little truffles taste just like cookie dough and since they don’t have any eggs, they’re totally safe to eat. These can be decorated in all sorts of creative ways and they’ll look like a suitable ‘grown up’ dessert, even though you’re eating cookie dough! Chocolate Chip Cookie Dough Truffles Ingredients Directions Use an electric mixer to cream the butter and brown sugar , add the vanilla. Makes: 3-4 dozen
Vanilla Latte Cupcakes Since gaining a reputation for being “the cupcake lady” (or whatever you want to call me), I rarely make cupcakes without a purpose. Usually they are for someone’s birthday, graduation, or even the occasional wedding, but it’s not often I find myself baking cupcakes just because . However, these vanilla latte cupcakes had been on my list for a long time without anyone requesting them and when I saw a multi-hued container of chocolate-covered espresso beans at The Fresh Market recently, I figured that was reason enough. Despite my former dislike of coffee-flavored things, both desserts and the drink in general, I have made a complete 180 in that regard during my past five years of blogging.
How Sweet It Is Strawberry Lemonade Cupcakes with Cream Cheese Frosting Summer is coming and I’m beginning to think of lazy days and lemonade. We just had a horrible Winter Storm last week and although the snow is almost melted now, having a Spring snow storm is down right depressing. I took pictures of the morning after storm and you can see how our property looks after 12 hours of sleet, freezing rain and snow. To boost our moods I decided to make some happy cupcakes. I’ve not made cupcakes in a few weeks and I miss them! For the Lemonade Cupcakes I adapted my favorite vanilla cupcake recipe from “Small Batch Baking” by Debby Maugans Nakos. 4 tablespoons unsalted butter, at room temperature 1 c. all-purpose flour 1/2 cup buttermilk 1/4 teaspoon baking soda 2 egg yolks, at room temperature 1 tsp pure vanilla extract 3/4 cup plus 1 tablespoons sugar 1/4 teaspoon salt 1 tsp Instant Pink Lemonade Mix (I used Crystal Lite) 4 large strawberries, carefully diced Makes 9-10 regular sized cupcakes Cream butter, sugar and lemonade mix until fluffy.

Earl Grey Cupcakes with Lemon Buttercream I still make my cakes by hand, with a bowl and a good heavy duty fork. I know, I'm a total luddite. But I actually like making cakes and cookies this way, there's something so first-hand about the process. I've gotten into the habit of bringing cupcakes to work fairly often (every other Friday, to be precise) and each time I make them I'm reminded how much I enjoy the process, and also how good homemade cake is. I made a standard back-of-the-box American buttercream because people love the stuff, but to my taste it's a tad too sweet, even with the addition of plenty of lemon. The hardest part is taking all those cupcakes on my 25 minute train ride to work. Earl Grey Cupcakes with Lemon ButtercreamI know you'll be tempted to make this using whatever variety of tea is sitting in your pantry. 1 cup (1/2 lb) unsalted butter, at room temperature2 cups sugar4 eggs3 cups self-rising flour1 cup milk2 bags or 2 tablespoons earl grey tea 1. Lemon Buttercream 1.
Parmesan Roasted Potatoes Ok fine. I’m officially ready to make the transition to fall. And I thought, what better way to do it than with my all time favorite Parmesan Roasted Potatoes! These are like candy. 100% addictive. Once you stop, you just can’t stop. I always, without fail, make these with Yukon Gold potatoes because here’s the truth… I’m too lazy to peel the skins off potatoes. This is more a technique rather than a recipe, since you can scale these potatoes up if you’re cooking for a crowd. You’re going to start with some naked potatoes…. Add on all the seasonings… Using your fingers, go ahead and toss everything together…. Put them in the oven for about 15 minutes. Once they are nice and golden and crispy, throw them onto a serving platter…. And then EAT!! And just a public service announcement – make a double batch and then serve them with breakfast the next morning too. Parmesan Roasted Potatoes Ingredients Instructions Preheat your oven to 425 degrees.Place the cubed potatoes into a baking dish.
