A lot of cake's that I have experimented with before are like a vanilla cake with bits of Oreo in them, which didn't really give them enough Oreo flavor. But these were a lot better. Easy Bite Size Apple Pie Recipe I've never made an actual pie. I would usually rather have something chocolaty, but there is just something about a warm, homemade pie in the fall that I love. I figured I better start small before jumping into full fledged pie making and I'm so glad I did. They were delicious! Easy Bite Size Apple Pies: Ingredients: 1/2 c. sugar 2 tsp. cinnamon 1 pkg. Coffee Bacon Sandwiches You guys! Um… everything is seriously BONKERS right now! a) there’s coffee on my bacon. b) there’s a TON of you at my first book signing. c) i’m out in the world wearing a blazer and pretending that I’m not shy. And things have only just begun to get crazy. But first, Coffee Bacon… yet another recipe from the Joy the Baker Cookbook, and one of the best sandwiches I’ve ever shoved into my face. I mixed together ground coffee beans, brown sugar, molasses, chili powder, and a bit of water, and created a loose paste. You know how bacon comes in a package layered and staggered? Broccoli Parmesan Fritters Last week, it was pointed out to me that among the 750 recipes in the archives, there is but a single recipe that utilizes broccoli. Just one! (It’s a great one, though.) For comparison, there are 11 recipes that use cauliflower and 26 with mushrooms. What terrible oversight could have led to this? I buy broccoli (and its friends) approximately once a week, year-round but this wasn’t always the case. Please understand: this is not one of those stories about how preciously advanced my toddler’s tastes are, how early he took an interest in foie gras and how he turns his nose up at white flour pastas, preferring farro. I have a theory that you can tuck almost any finely chopped or shredded vegetable — be it potatoes, zucchini, or an Indian-spiced mix — into a savory pancake, fry it in small mounds until crisp on both sides, serve it with a dollop of a sour cream or yogurt sauce and they will be inhaled. So, you know where this is going. And with that, I had them for lunch instead.
Snickerdoodle Muffins I have been obsessed with Pinterest lately! Pinning this and that all while trying not to drool all over my computer. While I like pinning lots of different things, as you can imagine, I love pinning recipes. Could it be, one of my favorite cookies in a breakfast treat? These muffins made the best late-night snack I have had in a while! I really need to stop looking at Pinterest after dinner! The dough is very soft, so when you drop some into the cinnamon-sugar mixture you want to spoon some of the mixture over the dough before you start rolling it. This way your fingers never touch the sticky dough and you don’t end up with snickerdoodle batter all over your fingers. After the ball of dough is completely covered in cinnamon and sugar just plop it into the muffin liner and bake! Apple Pies I know, I’ve made a few pies lately. But see how these are different? Look at how adorable these are! I mean, come on. I sure couldn’t. We ate them before I had a chance to think about pictures. Oops. This is why I had leftover dough for that impromptu dinner. Although this recipe is a little time consuming, it’s no harder than making any sort of real pie. It still involves slicing fruit. Rolling out crust and making it look pretty. Mixing fruit and sugar and cornstarch. And taking bites with your eyes closed so you can focus solely on each flavor. Please give these a try. Apple Pies Inspired by Pinterest 1 prepared pie dough, rolled out and sliced into strips 6-8 large apples (really any kind of apple will do) 1/3 cup sugar, plus more for sprinkling onto the crust 1/3 cup brown sugar 1 tsp cinnamon 1/4 or 1/2 tsp cardamom, if desired 1 tsp cornstarch Juice of a lemon or lime, mixed with 1 cup of water 1 tbsp melted butter Preheat the oven to 375F. Lemon-Lime Mousse with Fresh Strawberries I adore Key Lime Pie and order it as often as it appears on a dessert menu. Most of the time I’m disappointed. It is usually too sweet, not tart enough and the texture just screams gelatin. When I took a bite of this mousse it reminded me of a super light key lime pie filling. You can make this mousse with just lemons, or limes, but I thought the combination of lemons and limes gave the mousse a more complex flavor, that ended up tasting like the fragrant key limes. Lemon-Lime Mousse: 6 large eggs 1 cup sugar 1/2 teaspoon salt 3/4 cup juice and all the zest from the lemons and/or limes 3/4 cup heavy cream 1 teaspoon pure vanilla extract Strawberries: 1 pound fresh strawberries, sliced thin 1/4 cup sugar 1 to 2 tablespoons orange flavored liqueur To make the mousse: In a non-reactive saucepan whisk together 3 eggs, 3 yolks (reserve the 3 egg whites), 3/4 cup sugar, salt, juice, and zest. The lemon curd is done when it is as thick as pudding and coats the back of a spoon or spatula. Serve chilled.
Homemade Baked Mozzarella Sticks Mozzarella sticks are a delicious treat, probably one of the most popular appetizers at restaurants, and a fun party food. They tend to be rather fattening, especially considering they are usually fried, but they are so irresistibly tasty. So how do you give in to the temptation that is mozzarella sticks without the guilt? Ingredients 1 pkg. low fat mozzarella cheese strings (8-10 sticks) 1/2 cup flour 2 large egg whites, lightly beaten 1 cup dry bread crumbs or Italian style panko (seasoned) marinara sauce for dipping Directions 1. I hope you enjoy this delicious, healthy twist on traditional fried mozzarella sticks. Note: Some comments indicate that mozzarella is oozing sooner than time prescribed in this recipe- keep an eye on the sticks while baking and feel free to shorten the bake time to suit your oven. Brownie Rollout Cookies Two weeks ago, Alex and I took advantage of the then-awesome weather and went out for dinner at a place with outdoor seating. One cocktail led to another and then Alex put his hand on my knee! No, just kidding. He actually suggested that we order dessert, and in particular, the homemade ice cream sandwiches on the menu. The two tiniest, most precious ice cream sandwiches arrived a few minutes later and, you know, the ice cream, it was pretty good. You see, we made chocolate cookies exactly like that for Hanukah each year growing up. I know what you’re thinking: chocolate roll-out cookies? They will not disappoint. I should also tell you that because of their shatter-free bite, they also make excellent lids and bases for ice cream sandwiches. orangettes Saturday, November 18, 2006 How to make orangettes: Slice ends off four oranges, score the peel from one end to the other, and remove the peels from the oranges. Slice the peels into thin strips and trim the edges. Using a medium size pot, place the peels in boiling water and blanch them for a few minutes. Prepare the simple syrup by combining 8 ounces water with 8 ounces sugar in a saucepan. Melt 16 ounces dark chocolate over a double boiler. Recipe adapted from here.
Brown Butter Double Fudge Chocolate Chip Cookie Dough Cookies Little bit of a mouthful there. But it’s like a cookie on top of another cookie! Yeah. Like total dirty cookie on cookie action. Except these ones down below wanted to try a few different positions. I dunno… they’re all mixed up. In order to solve a common I-want-a-chocolate-CHOCOLATE-cookie-but-he-wants-a-plain-chocolate chip-cookie dilemma that happens like, every single weekend here… I made both. Some of them smashed up against each other while others sat on top of each other but in the end, they all tasted… fantabulous. And then they tasted extra delicious after I spent two hours cleaning out the contents of our bar (take that as you will), after he spent three hours organizing the pantry (that was weird) and after we both needed to severely eat our emotions immediately post-Boardwalk Empire finale. Chicken Enchilada Pasta We are a split family when it comes to dinner choices. My daughter, if she had a choice, would have spaghetti every night… and I would choose to have Mexican every night… and my husband and son will eat just about anything. This meal is the best of pasta and Mexican. It is DELICIOUS! I had my doubts… but let me tell you, everyone in my family LOVED this meal! Chicken Enchilada Pasta A yummy spin on two classics! Ingredients 2-3 chicken breasts, cooked and shredded 2 Tbsp. olive oil 2 garlic cloves, minced 1 medium onion, diced 1 medium red pepper, diced 1 (4 oz) can diced green chilies ½ tsp. salt 2 tsp. chili powder 1 tsp. cumin 2 (10 oz.) cans green chili enchilada sauce ⅔ cup red enchilada sauce 2 cups shredded cheddar cheese 1 cup sour cream penne pasta Instructions Cook chicken, drain, and shred (you could use a rotisserie chicken to make it even easier). Healthy Baked Chicken Nuggets | Ginas Skinny Recipes Chunks of all white meat chicken breasts coated in breadcrumbs and parmesan cheese then baked until golden. An easy chicken recipe your whole family will love. What can be more kid friendly than chicken nuggets, even the pickiest kids like them. Serve them with ketchup, bbq sauce or whatever you like to dip your nuggets into. Adults can serve them over your favorite salad for a satisfying lunch. Kids love finger foods or anything you can eat with toothpicks so when my daughter was young I would make her a dish of bite sized goodies she liked such as tomatoes, olives, pasta, etc. and served them with toothpicks and she always cleaned her plate! Once I'm in breading mode I usually make breaded zucchini sticks as well and bake them all at the same time along with some pasta and a salad for a complete meal. Blueberry Crumb Bars I uploaded pictures of this recipe yesterday onto Flickr, but didn’t get to telling you all about it because I was feeling a little lackadaisical after that whole seven days in a row of posting thing.
