I was so in love with the banana oatmeal that I made last week (I’ve been eating it nearly every morning since) that I decided I wanted to try more variations on oatmeal because I’m suddenly an oatmeal lover. Ingredients 1/2 cup Old Fashioned Oats 1/2 cup milk 1/2 cup water 1 Tbsp light-brown sugar 1/4 tsp cinnamon 1/4 tsp molasses Pinch salt 1/2 Tbsp butter (optional) Icing 1 Tbsp Cream Cheese or Neufchatel Cheese, softened 1 Tbsp powdered sugar 1 tsp milk Directions In a large microwave safe bowl, combine oats, milk, water, brown sugar, cinnamon, molasses, and salt.

I awoke up at 2am one night with this crazy idea that we could make a birthday cake that would hide treats inside, just like a pinata. I worked with my friend Athena to make it happen. To make the Piñata Cake you’ll need: two boxes of cake mix (any flavor), two containers of frosting (any flavor), an assortment of small candies (i.e. jelly beans, M&Ms, lollipops, snack-size chocolate bars, etc.), a 1.5 quart oven-safe bowl (greased and floured) and an offset spatula. Make cake mix according to box directions. Remove cakes from oven. Arrange a plate over the cake and flip over so that the cracked side faces up (the smooth side should be on the bottom). Lay a cake with the exposed side up (the side in which the dome has been removed). Place one cake on a cake plate/stand (feel free to use a cake board), hollowed out center facing up. Remove cake from fridge.

Bailey’s Cheesecake Cupcakes | Baked In For the past couple of years, I’ve done this thing at work where I try to make special cupcakes for everyone on my team’s birthday. They pick a flavor off of my menu and get a half-dozen to take home, and the rest of the batch is for everyone to enjoy. This was really easy when I was on a six-person team, slightly more difficult when we kept adding on new people and eventually got into the double digits – and on top of that, they ALL have summer birthdays. Seriously. I think there’s maybe one November, but June, July, and August are teeming with coworker birthdays. This shouldn’t really matter since I switched projects in April and am again on a much smaller team, but none of the people on my new team like sweets. Try is the operative word.
