Here’s the How To: Thaw out a box of Puff Pastry, and cut along the fold lines to make 6 large rectangles. Layer 1/4 of a whole graham cracker, a piece of milk chocolate bar and a spoonful of peanut butter on one side of the Puff Pastry. Wet the edges with water (dip your finger in water and gently touch along the edge), fold over the filling ingredients and press edges together.

I am practically jumping out of my old computer seat dying to share my latest cookie with you :) A week or so ago as I was making the boys an ice cream shake, I started thinking…..hmmm I wonder how vanilla ice cream would work out in chocolate chip cookies? Well, can I just tell you it worked, and it’s over the top INCREDIBLE! I used a creamy all natural vanilla ice cream by Breyers. I really think any vanilla ice cream would work just fine. So, what you’ll taste is a delicious very “vanilla-y” flavored chocolate chip cookie. Have fun baking!! Here’s the line up of most of the ingredients. Cream your butter and sugars as usual. Mix in your large eggs. And your pure vanilla. Here’s where the fun begins, get a nice big scoop of your favorite Vanilla Ice Cream. Yummy!! Our options are endless, can you imagine some other ice cream flavors? Add in your dry ingredients. And your favorite bag of chocolate chips Mix until just combined. If you follow Willow Bird Baking on Facebook or Twitter (you do, right?), you’ve probably heard me whining about it lately (okay, maybe this isn’t the best way to encourage you to follow). It started with a sore throat and has turned into a beastly, phlegmatic ogre of a cold that has taken up residence in my chest and commenced hanging draperies and such. Who could resist cream-filled chocolate sandwich cookies? I went out yesterday to do my weekly shop, came home, and before I was able to bring in the first grocery bag Matt was hunting for the cookies and cream ice cream. One of Matt’s favourite desserts of all time is cherry cheesecake and I thought to myself why not Oreo Cookies and Cream Cheesecakes, that should satisfy his craving. Plus these cheesecakes are super easy to prepare, everything comes together in one bowl and there’s no crushing chocolate wafers with a rolling pin, then melting butter, baking the crust first and then baking a second time when filled. Drop an Oreo cookie into each muffin tin, make filling, add chopped cookies, bake, and enjoy, how easy is that? I can’t wait to try my hand at homemade Oreo cookies. Except these ones down below wanted to try a few different positions. I dunno… they’re all mixed up.
