Earthquake Cake - Two Versions PHOTO COURTESY OF HILARY Earthquake Cake One 2/3 cup shredded coconut 2/3 cup pecans -- chopped 2/3 cup chocolate chips 1 box German chocolate cake mix 8 ounces cream cheese 1/4 pound butter -- at room temperature 1 pound powdered sugar Sprinkle the coconut, pecans and chocolate chips over the bottom of a greased 9 X 12 inch cake pan. Prepare the cake, following the package directions, then pour batter into prepared pan. In a small saucepan, melt the cream cheese with the butter, then stir in the confectioners sugar. Earthquake Cake Two 1 cup coconut 1 cup chopped nuts 1 box chocolate cake mix 1 8oz package cream cheese, softened 1/2 cup butter (1 stick) softened 1 teaspoon vanilla 2 cups powdered sugar 3/4 cup chocolate chips Grease a 9-by-13-inch pan. In a separate mixing bowl, beat together the cream cheese, butter, sugar and vanilla with a hand mixer on low to medium-low until well blended (add the sugar about a half cup at a time to prevent a powder explosion).

I HATE paying over $4 a glass for it at some fancy-schmancy coffee house! After literally years of trying, I have found it! I'm gonna show ya how! First... You do NOT want to brew a normal pot of coffee for your iced coffee. Iced Coffee Concentrate. Rainbow Cake in a Jar I’ve always had a penchant for sunshine in a jar. Doesn’t the very phrase itself, “sunshine in a jar,” roll off your tongue and fill your mouth with magic? While I’ve never yet found myself a sunshine in a jar, I think we may have just concocted it in our kitchen tonight. In this simple recipe, a basic white cake is turned into a slew of bright colors, baked to perfection, then topped with a creamy white frosting. Cakes baked in jars can be topped with traditional metal canning lids and stored in the fridge for up to five days. Cheesecake in a Jar Recipe I’m fairly certain that I’ve discussed my lack of love for the great outdoors, so it’s safe to say you’ll never hear me writing about long hikes in the woods or camping anywhere other than on a deck chair at a five star resort (Hey, I can dream, right?). Not to say that I am not fond of the fresh air and scenery, I just like to keep a screen between me and the bugs. Needless to say, I don’t last long at picnics in the park or anywhere outdoors for that matter. Usually an annoying fly or buzzing bee will send me into a fit within 20 minutes and I’ll sit there contemplating my escape route or the idea of eating in my air conditioned vehicle. We Aren’t Living In A Vacuum; Coping Strategies For Navigating Fat Hate First and foremost: Thank you. Thank you so very much. Y’all made me cry THREE TIMES at work yesterday. I was joking, on Twitter last night, and asked if I should talk about kittens or shoes today. Predictably (because I know and love y’all), kittens in shoes won out. Haters, oh, haters. It’s not right and it’s not our fault – but it all-too-commonly IS something we have to deal with. 1. 2. 3. I’ve had a lot of therapy over the years. This is because I am a nerd. So I’d remind myself and then I’d distract myself. I’m also a big fan of distraction. That’s one reason I think it’s important to have some friend who are into FA – they don’t have to be fat but they do have to be people you trust not to bring up how many carbs are in a piece of pizza when you’re trying to have a fun Saturday night. It’s important to note that none of this solves the essential problem of people being douchebags to fatties. We’ve still got to cope – and we’ve got to cope in ways that don’t penalize US.

So when I saw that For Such a Time as This, my assigned blog for this month’s Secret Recipe Club, had a recipe for banana pudding AND I had all of the necessary ingredients already in the house, I knew it would be a perfect treat for my banana loving beast.
