Nominations are open for 2012 CNN Heroes Lake Mary, Florida (CNN) -- Shortly after joining the Lake Mary Police Department in 2007, Zach Hudson was dispatched to the home of two elderly women. What he saw left him appalled. The two women -- a mother in her 90s and a daughter in her 70s -- had no food and no electricity. "They were struggling horrifically," Hudson recalled. In his 10 years as a Florida police officer, Hudson had witnessed countless senior citizens in tragic circumstances. "I'd had enough," he said. Since 2009, Hudson's group has tended to the basic needs of nearly 1,000 seniors in Seminole County, Florida. Zach Hudson was raised in a senior community by his grandparents and great-grandmother. Turtle Cheesecake with Caramel, Chocolate and Pecans
This is a dessert that gets talked about long after the plates are cleaned. I make it only once or twice a year and it is always by request. The cheesecake starts with an oreo cookie crust that is covered in caramel sauce, then a layer of creamy cheesecake. Once cooled, it is sprinkled with toasted pecans and drizzled with both caramel and chocolate. Just the smallest sliver really is a serving. Decadent, rich and worthy of any special occasion, this is a masterpiece of a cheesecake. COOK'S NOTE: I typically use a 9" pan and I have used a 10" pan for this cake as well in the past. It comes down to three factors: fat, air, and serving temperature. Emulsifying fat into a base (or using already emulsified ingredients, like cream and milk) sticks fat molecules in between water molecules, literally getting in the way of ice as it freezes. There are some other tricks to keep ice cream soft, such as alcohol, starch, protein (in egg and milk), and natural stabilizers like guar gum and carageenan, but the top four above are the big factors at play. Today’s post is a lesson in improvisation. Why? Well, this project was INTENDED to be a candy tray, a fancy version of something I saw done flawlessly at Tutto Bella. Now, if I was a crafting perfectionist, or blogging perfectionist, or if I’d had two more cups of coffee today, maybe I’d've tried a second time to make my vision work…but I’m not, I’m not, and I didn’t. Supplies: candy canes- $1 for twelveold fashioned hard candies- $1starlight mints- $1 for a bag, I used just one for this particular project Unwrap the candy canes and starlight mint and arrange on a baking sheet lined with wax paper or parchment paper. Bake at 350 for 8-10 minutes, but watch it closely the whole time!! Then I realized it was still quite hot and pretty pliable, so I quickly grabbed a bowl, turned it upside down and placed the whole thing on top.
