Skinny Mashed Potatoes Mashed potatoes are one of my favorite things to eat on Thanksgiving, but this year since I am pregnant and on a really strict low carb diet (for my diabetes) real mashed potatoes are out (bummer). I recently started researching alternatives to some of my favorite dishes because there is NO way my plate will be without a big ole pile of mash potatoes. I came across this recipe that uses cauliflower instead of potatoes. ***BEST MOCK mashed potatoes I have ever had! What you will need: 1 head of cauliflower 1 tablespoon of cream cheese1/4 cup grated Parmesan cheese1/2 teaspoon of minced garlic1/2 teaspoon of salt5 or so dashes of pepperChives for garnish Directions:Wash and cut cauliflower into small pieces. These were seriously unbelievable!

A Cozy Kitchen - StumbleUpon Kitchen Helpers I found these helpful charts last week and just had to share! Both of these beauties are from Chasing Delicious (aka one of the most fab foodie blogs out there)! Aren’t they faaaaabulous?! I love tea, but I’m no expert. For people of the UK, have this one with you while you’re meal planning or grocery shopping! I’ve fond some other helpful charts that I’ll share in another post! Yay charts! Cheese Pinwheel Rolls Sooner or later, all my conversations inevitably turn to food. Don’t believe me? Call me up sometime and try to, say, sell me some insurance. I guarantee that before we get off the phone, I’ll be giving you my recipe for blackberry jam. I can’t help it. It’s just how I work. Perfect example: I was in a meeting a few weeks ago at the office. What was the best way to make them? Ah, the Frankenroll This recipe borrows heavily from two fairly unrelated things. To make these rolls, spread pizza dough liberally with melted butter, sprinkle it with cheese and spices, roll it up like a stromboli—then slice and bake like a pan of cinnamon buns. The result? Fill them however you like The best part about these rolls? This is what I always refer to as a Sliding-Scale Recipe. You can toss it together with a ball of pre-made dough and a bag of shredded cheese from the grocery store—or you can go all out and make the dough from scratch and grate your favorite cheeses by hand. Fluffy Pancakes | Blogger For Hire - StumbleUpon This pancake recipe is the result of mixing and matching different recipes from many different sources. It is the result of trying and failing so many times, that I almost declared pancakes as the one breakfast recipe I couldn’t master. But I persisted, and this recipe is perfect – as perfect as a pancakes recipe can be, because making pancakes does involve frying, and frying is something that each of us needs to play with. It changes depending on your type of stove (gas or electric), on how hot the skillet is, and on how evenly hot you manage to keep it while frying multiple batches. But the instructions here are as close as it gets to “perfect,” and the result? This recipe makes 16-18 pancakes. Fluffy Pancakes Makes 16-18 pancakes. Iny’s Prune Cake I was fortunate enough to happen upon this recipe for my great-grandmother Iny’s Prune Cake a few years ago. Written by her frail, small hands, the recipe’s simplicity appealed to me, and I rushed out to buy the ingredients and prepared it the same day. “Marlboro Man will never eat this,” I thought, as I mashed up the cooked prunes according to Iny’s instructions. Marlboro Man returned from working cattle a little while later and noticed the warm cake sitting on the kitchen counter. Honey, it’s me. Ahhh. To begin, place prunes into a small saucepan. Cover with water, and boil until soft and mashable, about eight minutes. Drain water, then mash prunes on a plate. It’s okay to leave some chunks in there—gives the cake some character. Set the prunes aside. Sift together flour, cinnamon, nutmeg, and allspice. Mmmm. In a separate bowl, mix together oil, sugar, and eggs. Combine wet and dry ingredients together, and splash in the buttermilk. We want this cake nice and moist. Bring to a slow boil.

Coconut oil is made from pressing the mature fruits of coconut palm trees. It's very popular in tropical parts of the world, like the Philippines, where there is incidentally less cases of heart disease and cancers than compared to the western world. Coconut oil provides a great source of fuel, energy, and the highly-beneficial fatty acid, lauric acid. Whether you are an athlete, dieter, or have trouble digesting dairy or fats, coconut oil might just become your new best friend -- it can be readily digested more than other oils. Coconut oil is a significant plant source of lauric acid, a fatty acid recognized for its anti-bacterial, anti-viral, and anti-microbial properties. Although a saturated fat, coconut oil contains no trans-fatty acids. Baking tips: Coconut oil melts around 76 F and forms a hard solid if kept any colder than that. Be sweet to yourself.
