Sante Fe Chicken Salad
One of the things I’m still craving after our McDonald’s Blogher trip over last summer is Southwestern Chicken Salads. The Chicago on campus McDonald’s had the best McDonald’s food I’ve ever had. It was practically five star compared to our local McDonald’s or any other McDonald’s I’ve ever been to (not that we frequent McDonald’s that much). My son even asks regularly to go to Chicago McDonald’s. Notice I didn’t say the McDonald’s down the street.

Crab and Corn Cakes
Sheri Giblin total prep I absolutely love crab cakes, but I don’t make them often because lump crab is not cheap. Adding corn helps stretch the crab and makes the cost a little more reasonable. This makes eight good-sized crab cakes, which is plenty for a meal for four or an appetizer for eight.

Back in February, I visited one of my best friends in Cleveland. One of the dishes I sampled were the "Lola fries" at B-Spot, Iron Chef Michael Symon's burger joint in the Summit Mall (not to be confused with OUR Summit here in Birmingham). The Lola fries were simple; skinny-cut fresh fries, flavored simply with rosemary and sea salt. THEY. WERE. AWESOME.

This is a super fast and super easy recipe that everyone will love. It makes an impressive appetizer and is terrific for parties and special occasions (think: Superbowl) It uses pre-cooked bacon (found next to the regular bacon in the supermarket) to save time, but you can use your favorite bacon (pepper bacon would be great.)

Thai Chicken Pizza
I hope everyone had a good weekend. Kelly and I made the desserts for a bridal shower for one of Kelly’s friends. We made about 75 cupcakes, caramel espresso bars, cake balls, cookies, and oreo truffles. It was a lot of work but it was fun too. We even had our Dad make a 4 tier cupcake stand out of plywood.
Bacon Wrapped Jalapenos Recipe
One of the best grilled appetizers is bacon wrapped jalapeno peppers. This recipe is so easy to make and it only consist of 3 ingredients; fresh jalapenos peppers, cream cheese, and bacon. The jalapeno peppers are first sliced in half then seeded, stuffed with cream cheese, wrapped with bacon and grilled. You should consider wearing gloves when slicing and seeding the jalapenos because they can burn your hands. With the play offs coming up and the super bowl near this is a perfect recipe for game day.
