30 Drinks Every Bartender Should Know So I have a new hire who is about to bartend her first bartending shift and I was about to e-mail her 30 drinks every bartender should know and looking for a list (so I wouldn’t have to make it) and almost every list I found was absolutely ridiculous. For example, one site listed the Bocci Ball (don’t know what it is, probably never will as in 12 years no one has ever ONCE asked me for one). Or the Freddy Fudpacker (aka The Cactus Banger) – once again NEVER HEARD anyone order either of these ever ONCE. I’m not naming any drinks on this list where the ingredients are the name i.e. vodka tonic, amaretto sour, or gin and juice. 1. How To Make the Top Cocktails Every Bartender Should Know Apple Martini I hate to even put this on the list, but it is a cocktail that I get an order for at least once a weekend. 3 oz Apple Pucker, 2 oz Vodka, (can add 1 oz fresh lime sour if you happen to have something like that in your bar) shake and serve up with a bright red maraschino cherry Rusty Nail

Milk and Booze! How To Make Sweet Milk Liqueur Milk liqueur: a Portuguese recipe made from equal parts vodka (or grappa), milk, and sugar. Say hello to the newest addition to our liquor cabinet! This rather improbable combination of vodka and milk makes a liqueur so smooth and perfectly sweet that you'll want to sip it straight. Get the recipe, our review, and some ideas for using this sweet liqueur below. We love the idea of making our own liqueurs, and we've been wanting to try this milk liqueur ever since we saw it in David Leite's most recent book The New Portuguese Table. The hardest part about this liqueur is waiting for it to infuse. But strained a few times to catch all those milk solids, the resulting liqueur is perfectly clear with a lovely sunshine yellow hue. This is definitely a winner in our book. Ideas for Using:• Split into several small bottles for presents - Wouldn't these make a cute Valentine's day gift? Homemade Milk Liqueur adapted from The New Portuguese Table by David Leite Makes about 1 quart of liqueur

homebrewing There are two basic ways to make beer: All Grain and Malt Extract. The difference is how much processing has taken place to the grain by someone else. When starting with the grain, you convert the starch within the grain into sugar, extract the sugar, add hops to it, boil then ferment. When brewing extract brews, you buy syrups or powders that you dilute, add hops to, boil then ferment. But first you need a good recipe. All grain If you have selected an all grain recipe the first step after purchasing the ingredients is to crush your grain. When the time to brew arrives you will need to convert the starch into sugar (maltose). Once the conversion is complete you must separate the sweet liquid from the discardable grains in a process known as lautering. You are now caught up to the point where extract brewers start. Extract brewing starts here As an Extract Brewer, you are purchasing the syrups or powders that contain the sugars extracted from the grain in the above directions.

The Ultimate Strawberry Lemonade One of the first times I ever realized that – HEY! I can cook for myself! – was when I first learned to make lemonade. I magically found the refrigerated lemon juice at our house and followed the directions to make my own lemonade. Sorry for the detour. Anyway, there was a summer there where I made my own lemonade every single day, making sure to rub it in my sister’s face that I knew how to and she didn’t. The key to this being the ultimate lemonade is that you blend it up with the lemon rind in there. And any time of day for that matter. (makes 2 pint-glass servings with ice) 3/4 cup sugar2 large lemons, microwaved for 30 seconds2 cups water1 cup of frozen strawberries, microwaved for 1 minute (you could use fresh, but I think the frozen works better here) In a blender squeeze the lemons and add the rest of the lemon, rind and all. **Note: I like to microwave the lemons to release more of the juices, and microwaving the strawberries does the same sort of thing.

A Different Kind of Smoothie I sat down with a precious girlfriend for lunch at Fiddlecakes the other day and she told me about green smoothies. Huh? Elusive Ecto-Cooler Recipe Revealed? Homemade recipe for Ecto Cooler just in time to practice for Halloween! The mid to late 80s represent the bulk of my memories from childhood, from films like Indiana Jones and the Last Crusade to Aliens and, yes, even Cannon Films’ Masters of the Universe. It was also a great time to be a Ghostbusters fan with both films and a popular animated series (The Real Ghostbusters) proving to be pretty damn popular. Merchandising tie-ins came quick and along with the scores of comics, apparel and action figures came Hi-C’s famous Ecto-Cooler drink. Strangely enough, the drink has become almost as well-known and popular as the films and cartoon that spawned it with countless articles dedicated to it like this one from X-Entertainment’s Matt Caracappa. According to Wikipedia, Ecto-Cooler even continued to be release well into the early millennium (2001) going by the pseudonym of Shoutin’ Orange Tangerine. You will need: - 1 1/2 cups of vodka (can use more or less if desired)- 1 tub of gummi bear candies, plastic with lid (about 1kg. Tub found at Wal-mart)- 1 can of frozen juice concentrate, any flavour desired (I used fruit punch.) You can keep the juice frozen for now, as you will not need it for a few days. - First step is to open the lid of your gummi bears and pour in the vodka. - Give your newly introduced gummi-bears and vodka a stir, and replace the lid. - Let this sit for five days, stirring a couple of times each day.

Chocolate Guinness Goodness Recipe at Epicurious Editor's note: This recipe was developed by Shane Philip Coffey, the chef at Alias restaurant on New York City's Lower East Side. This rich and luscious dessert came about because I needed a special dessert for a St. Patrick's Day tasting menu. As the 17th of March drew closer, I looked for inspiration at my favorite Irish pub in Manhattan. Make the effort to find a good dark chocolate (about 70 to 72 percent cacao).
