
Cake Batter Pancakes I’m fairly convinced that the world would be a better place if more sprinkles were involved. I know. I just made pancakes. When I develop recipes, I try to make all of them for a purpose. Case in point: it isn’t anyone’s birthday. But I don’t need an excuse to eat cake and sprinkles. And because pancakes always need some sort of topping, I went with a sprinkled glaze. Because nothing goes better with cake than more sugar! These are just plain fun. Sure, they would be best for a special occasion like a birthday, but they also work on a random Saturday in January when it’s -2 degrees outside and all you want to see is some sunshine. That wasn’t me. And yes, this means you will have an open box of cake mix, just like you did with the cake batter bark. Cake Batter Pancakes makes about 12 pancakes 1 1/2 cups all purpose flour 2/3 cup yellow cake mix 1 tablespoon sugar 3/4 teaspoon baking powder pinch of salt 2 eggs 1 teaspoon vanilla extract 1-2 cups milk (I used vanilla almond milk) assorted sprinkles
Coconut Ice Coconut Ice candy is so cool..not literally cool, it’s not actually ice. It’s a chewy little morsel of sweet goodness. It was quite popular at my sisters beautiful baby shower that I threw for her. in case you missed the awesomeness, you can view it here . One word of advice…DO NOT, I repeat DO NOT use regular sweetened flake coconut. It will be WAYYYYY too sweet. Ohhh, and I forgot the best part, you can color it any color you little heart desires! Apricot Sage Jam Ingredients: 3 lb apricots, stones removed 2 1/4 cups sugar 1/4 cup lemon juice 10-12 fresh sage leaves Directions: Lightly bruise the sage and place it into a tea ball. Place everything in a heavy bottomed pot. Stir. Bring to a boil. Pour into prepared jars leaving 1/4 inch headspace. Yield: about 4 8-oz jars Note: A great source for canning information is the Blue Book guide to preserving. My thoughts: Apricots are a lot of fun to can because you don't have to peel them.
Popcorn Fudge That's right. I went there. I told myself I was going to give up on the idea of putting popcorn in a dessert, after several failed attempts and so many other popcorn dessert recipes floating around the internet. But here's what happened; I was making regular old vanilla fudge for A's birthday and I got bored. He didn't want cake. He asked for lasagne, so I made that for him. I started making the fudge, and just happened to be making a batch of fresh popcorn for myself at the same time. I've tried quite a few fudge recipes in the past, with varying results. Popcorn Vanilla Bean Fudge(adapted from this vanilla fudge recipe)15g (1 tbsp) cold unsalted butter, plus more for pan1 1/2 cups pouring cream3 cups sugar1/4 cup liquid glucose or light corn syrup1/4 teaspoon salt1 tsp pure vanilla extract or vanilla bean paste1/2 cup popping corn kernels, popped Grease an 20cm square baking pan; line with parchment paper, allowing a 3cm overhang. Remove thermometer. Pour into prepared pan.

Combine in a small sauce pan and put on medium heat v Keep stirring until all the ingredients form into a ball v The consitancy should be something like play doh...but more rubbery. NEXT : fake blood ingredients1. 1 tbsp. all purpose flour2. 3/4 cup water3. Ok, this part is importantBefore cooking, combine the water and flour to form a slurry. Then add them to a small sauce pan and bring to a boil, let simmer for a minute or so (do not add the food coloring yet). This will make the 'blood' thick. Now that that is all done...let's move on to assembling the wound 8D Aside from the things we just made, this is what you will need. 1.

Any cookie dough will work, but here's the recipe I used: The Ultimate Chewy and Soft Chocolate Chunk Cookies INGREDIENTS 1 cup unsalted butter at room temp 1 cup tightly packed light brown sugar 1/2 cup granulated sugar 2 large eggs 1 1/2 tsps. pure vanilla extract 3 cups plus 2 tbsp. all-purpose flour 1 tsp. baking soda 1/2 tsp. salt 16 oz. flavorful bitter or semi-sweet chocolate, coarsely chopped (I used a 1 oz square of bitter sweet chocolate, a 4 oz bar of bitter sweet chocolate and about 10 oz of semi sweet chocolate chips) INSTRUCTIONS 1. Homemade Cotton Candy Cotton Candy is not just for carnivals anymore. In fact, turns out, it's becoming downright fashionable. According to this Boston Globe article, this early 20th century treat is getting a gourmet spin (spin, get it? spin?) In my last post we talked about a newly released book on working with sugar by Gesine Bullock-Prado, called Sugarbaby. The book is divided into sections according to the stage of sugar with which it is dealing. So home made cotton candy without a machine. Instead of a machine, you're going to use what Bullock-Prado calls a "decapitated whisk", which is simply the least expensive whisk you can find, with the tines snipped at the top by a wire-cutter. My first stick of cotton candy was abysmal because I held the whisk too close to the parchment paper (1 foot away is recommended) and I didn't swing it back and forth fast enough to really get thin strands. Fun Summer Dessert: Watermelon Pie One of my summertime childhood memories is eating the yummy watermelon sherbet dessert at Friendly’s restaurant. I loved it, so I decided to try to replicate this dessert for my own kids’ summertime memories! I made some “watermelon pie” for our 4th of July feast this year…to great success! My 4-year-old daughter loved it – like mother, like daughter! The best part…watermelon pie was super simple to make! Ingredients: - Lime Sherbet - Vanilla ice cream or Pineapple sherbet - Red/Pink-colored sherbet…I couldn’t find this, so I bought Raspberry/Pineapple/Orange swirl sherbet, mixed it up with red food coloring and it was perfect! Directions:1. A funny tip…I served the watermelon pie on paper plates, but wanted to take a nice picture for this post, so I put my own slice on a real dish.
