Al día siguiente volvió con un bolsita de chufas y me tuve que dar por aludido a la fuerza. Y como nunca había hecho horchata me puse a investigar y llegué a la receta de Carlos Dube, de Mercado Calabajío. No es sencillo encontrar chufas. Yo las he buscado en supermercados y centros comerciales y no las he encontrado. Ingredientes para 1 litro de horchata 250 gramos de chufas, 1 litro de agua, 125 gramos de azúcar. Cómo hacer horchata casera de chufa Lo primero que debemos hacer es poner las chufas a remojo, para que se hidraten y esponjen. Pasado este tiempo, ponemos las chufas hidratadas en un recipiente con un poco de agua y empezamos a triturarlas poco a poco con la batidora. Poco a poco irá saliendo la leche de la chufa o la horchata. Después añadimos el azúcar y el resto del agua al recipiente y mezclamos enérgicamente. Degustación

The raw cashew cheesecake experiment As the saying goes, three times a charm. No kidding! After having only minor success creating a raw blueberry pie and a strawberry cheesecake, I decided it was time to find a recipe that has already generated a lot of positive feedback. For the crust I used the following: 1.5 cups of almonds1.25 cups of pitted dates Like with the other desserts, the almonds were processed in the food processor, then dates added. Having problems with the crust sticking to the pie plate in my previous desserts, I decided to use a small amount of coconut oil and a paper towel to spread the oil on the plate before adding the crust mix. Finally the crust mix was shaped to fill the pie plate, then put in the refrigerator. For the filling, I used the following ingredients: 3 cups of cashews – soaked for an hour in a fridge1/3 cup of fresh squeezed lemon juice (required 2 lemons)1/2 cup pitted dates1/2 cup agave nectar1 cup extra virgin coconut oil1 teaspoon of vanilla extract1/2 cup of water Cashew cheesecake filling
