Groene Kookacademie. Groent. My diet has changed so much the last couple of years that I found the cafeteria at work could not supply my food any more. So two years ago, as a sort of new years resolution I started to bring my own lunch to work. So if you eat no meat, fish, sugar or wheat, what do you bring for lunch? And how do you get it all prepared in time? 1. Think ahead, make some extra dinner so you can take leftovers for lunch the next day or the day after. 2. 3. 4. Now some examples of what to eat. A soup, such as erwtensoep, mixed grilled winter vegetable soup or harira is easy to make in large quantities.

In the winter period I often make Belgian Endive (witlof) with cheese. In wintertime you can make a salad with rocket lettuce, purslane (winter postelein) or dandelion salad (veldsla). Hummus is a wonderful, healthy, cheap and very easy lunch dish. Avocado is very filling and full of healthy fats.
