They’re the beautiful, tentacle-shaped flower stems of the garlic plant and they pack a strong flavor punch. I was a bit thrown off by them at first because they can be tough and fibrous. But a little experimentation was all I needed to become a fan. Garlic scapes are wonderful when sliced thin and sautéed with vegetables. They also make an excellent base for pesto. This pesto is very strong by itself, which is why I like to combine a few tablespoons with an avocado to create a creamy pasta sauce. The avocado softens the intensity of the garlic flavor and creates a smooth coating for pasta. Creamy Avocado Pasta with Garlic Scape Pesto Author: Jennifer Farley Serves: 8 servings Ingredients garlic scape pesto 1 cup chopped garlic scapes ¼ cup fresh mint 2 tablespoons fresh basil ½ cup packed arugula ⅛ teaspoon kosher salt ¼ cup toasted pine nuts ½ cup pecorino romano or parmesan cheese ¼ cup extra virgin olive oil for the pasta Instructions Notes.

Creamy Avocado Pasta. I never liked avocados – until, as a vegetarian, I discovered cheese and avocado sandwiches. Now I find ways to use them in everything. Combining two of my (now) favorites, pasta and avocados, this 15 minute Creamy Avocado Pasta from Oh She Glows was a perfect Thursday evening dinner. Not only was it quick and healthy, but it was a great way to use the avocados I bought on sale. They all ripened at the same time, so I doubled the recipe to use them all before they spoiled. The only drawback is, because of the avocado, this dish doesn’t reheat well and needs to be served immediately. It would be a perfect light summer dish. Serves 2. Cilantro Rice with Corn, Black Beans, and Avocados. Over the years, I have taught myself how to like cilantro. I remember the first time I had it; it tasted like soap to me. Slowly, I started introducing it into my meals at restaurants. My favorite is the cilantro rice at Chipotle. I thought corn would compliment the cilantro rice well and add in some black beans and avocado to make it a complete meal (and a complete protein). Squeeze some lime on top to brighten it up.
