Croque-Madame. This is a heavenly, decadent, big, fork and knife sandwich. For the last year or so they have been serving a version of it at the Zodiac Room at the Northpark Neimans, qualifying it as the very best mall food I have ever eaten. And, I know the restaurant has a new name but I have boycotted the new name. But, I still love the place. Lily and I dropped in for lunch on a no-school day recently and, to my sadness, I found that my beloved and naughty Croque Madame had been unceremoniously ripped from my life. New menu. It is slightly time consuming for a sandwich but trust me when I say that you will be glad you made the effort. The Bread: I used a loaf I found at my local grocer called English Toasting Bread. For example…how about a little smoked salmon? Now, traditional Eggs Benedict is made with Canadian bacon, and you know how I feel about bacon. This is REALLY good. I love brunch! I love bacon! I love breggs! These little goodies are all of the above in a little two bite package. The other day I was scanning through my copy of William & Sonoma’s: Tools and Techniques. And, they are crazy easy to make. Pre-heat the oven to 400 degrees. Trim the crust and the corners off the bread, making wonky looking circles. Line a sheet pan with parchment paper and lay the bacon strips on it. Shape the cooled bacon into the toast cups, with the meaty side out.

Also, if you aren’t a fan of creamy delicious runny eggs you can beat 4 eggs with a bit of milk, season and spoon into the cups. Lower the temperature of the oven down to 350 degrees. We’re starting to get the hang of this baking thing…thanks to Simply Recipe‘s easy bread pudding and lots of left over French bread, we were able to whip up this delicious bread pudding with a bunch of items in our pantry. We substituted 1/2 cup of Kahlua liquor for the 1 cup of bourbon since we had that left over from the mochi truffles. We added some walnuts and didn’t use the 3tbs of melted butter to coat our ceramic baking dish. Instead, we just greased it lightly with some butter and that worked perfectly. The key step in this recipe is the sauce where you melt the butter, sugar and one egg. It was so good and we had so much bread, we actually made two batches and brought it to work.
