“Scalloped” is an attractive word, isn’t it? When I hear it I think of several things: first, there’s scallops, as in the seafood—totally delicious. Then there’s the scalloped shape that can live on the edge of a pair of shorts or on the collar of a woman’s blouse—always pretty and dainty. And of course scalloped potatoes also comes to mind, which carries my imagination to a land of crispy potato skins drenched in a sea of cheese and cream. I can think of no better place to exist, actually.

Mac & cheese. Oh how I love mac & cheese. It’s one of my favorite foods on the planet (besides chocolate). Whenever it’s cold outside or I need some comfort or I’m hungry or it’s a day that ends in ‘y’, I turn to mac & cheese.
I’ve got another fun idea today to dress up ordinary grilled chicken. This chicken breast is seasoned with lots of flavorful spices (basically the same ones you would have in taco seasoning) and topped with a fresh black bean salsa. The salsa is also really good on it’s own. I added defrosted corn, fresh chopped tomato, onion and cilantro to a can of rinsed and drained black beans. Be sure to rinse the beans really well for this salad so you don’t have any of the gravy part of the canned beans in your salsa.
