Je me revois il y a quelques années (!) étudiante, débarquant à Paris, me rendre expressément rue du Bourg Tibourg et passer les portes de Mariage Frères pour demander au premier gentleman portant les couleurs de cette Maison de Thé si des « cours pour découvrir et apprendre le thé ! » seraient bientôt dispensés… C’est chose faite.

Je dépose sur de la glace pilée les feuilles de thé (ici du Genmaicha) et le temps que la glace fonde, le thé est infusé, prêt à être dégusté! J’utilise environ 2 grammes (soit 1 cuillère à café) pour 10 à 15 cl (selon votre goût). Il s’agit ici de genmaicha (thé vert japonais sencha ou bancha agrémenté de grains de riz torréfiés) que je fais infuser sur de la glace dans un « Yuzamachi » (récipient japonais avec un manche destiné d’ordinaire à recueillir le thé et à le verser dans les tasses afin qu’il refroidisse). Les notes de noisette et d’herbes fraîches ressortent d’autant plus, selon moi, que l’eau est glacée. En terme de texture, le thé me semble plus « huileux », plus « rond »…
