I’ve got my nails painted red, my Valentine’s outfit picked out, and reservations made for Valentine’s dinner. Of course for us that means Wednesday night instead of Thursday; we go out to dinner either right before or after actual Valentine’s Day to avoid the crowds. As of last year, my favorite way to celebrate actual Valentine’s Day is with a heart shaped pizza from Papa Johns. Call it what you like, but I’ve been looking forward to it since sometime in mid-January. So on the note of love, here is a fun treat to make for your sweetheart! A few weeks ago, I posted in Foodie Failures about the red velvet cake that I attempted to make for my mom’s birthday. Once again I find that I’m not really the baker-type. It’s times like these that I really wish my sister in law lived closer because she is a baked goods goddess.

These moist and delicious cupcakes are perfect for Valentine’s Day, Christmas or anytime you are craving a sweet something! Today is Valentine’s Day and it is always one of my favorite days because it means I am going to be spoiled by my wonderful husband.

We used to go pick fresh strawberries and blackberries and then come home and pull out the electric machine and load in the ingredients. Watching the ingredients solidify into a delicious dessert had our eyes glued to the spinning bowl. A lot of cake's that I have experimented with before are like a vanilla cake with bits of Oreo in them, which didn't really give them enough Oreo flavor. But these were a lot better. I used a dark chocolate fudge cake mix instead of just a regular chocolate cake mix, which went really well with the cookies and gave the cakes just a little more flavor. So, in this recipe there is Oreo's in the cake, in the frosting, and at the bottom is a Oreo surprise. That's right, you put a whole Oreo at the bottom of the cake. Ingredients 1 package Oreo Cookies, regular size 1 package Mini Oreo Cookies, for decoration (optional) 1 package chocolate cake mix (mix according to directions on box) 8 ounces cream cheese, room temperature 1/2 cup butter (1 stick), room temperature 3 3/4 cups powdered sugar 1 teaspoon vanilla extract cupcake liners Preheat oven to 350 degrees.
