Taters …………. as we fondly call them here in the southeastern USA ………… mmm, mmm, mmm! To me, wonderful on their own, but when you pair them with delicious sweet potatoes, creamy goat cheese, salty Parmesan, milk, butter and soft, sweet garlic ………. ….. now you’ve taken me to potato heaven! I made these delicious Two Potato Swirls w/ Goat Cheese and Garlic for a friend’s birthday dinner last weekend, but since the recipe makes a bunch, I decided to take some along the next day when we visited my husband’s parents.
We took the photos for this post quite early that morning before we left for our visit. Guess what? After staring at those pretty swirls and inhaling the delicious aroma, (they were quite irresistible) we couldn’t stand it and each ate a bowl for breakfast - and loved every minute of it, mmmm-ing our way through every bite! Who needs cereal?! Besides being delicious, I love the fact that these can not only be made ahead of time, but they also freeze well. P.S. Directions:1. 2. 3. Easter Egg Cupcakes with "Yolk" Centers. Last year, I (and many of you) discovered the magic of Easter cupcakes baked in egg shells. You can bake any cupcake recipe in cleaned out egg shells and when you are ready to eat the cake, you just crack the egg and dig in.
Ah-mazing! One question that I was asked repeatedly on the original Easter egg cupcake post was whether the eggs could be dyed. I decided that a visual answer was in order. As you can see, the answer is a resounding, “Yes, siree!” Since I was remaking the Easter egg cupcakes anyway, I thought I’d give you a little surprise. I made the yolks by piping a layer of dyed cream cheese filling between two layers of batter. I baked the Easter egg cupcakes at my friend Brooke’s (of Sucre and Spice) while listening to polka music and watching her work on her wooden spoons.
These instructions for making Easter egg cupcakes are essentially the same as last year’s instructions with the egg-ception of the dyeing step and the cream cheese “yolk” filling. Needless to say, I almost always have apples on hand for snacks and cooking/baking. This particular recipe simmered apples and cinnamon to a sweet, syrupy perfection. Sweet potatoes and yams: True sweet potatoes are tuberous vegetables with light to deep-red skins and pale yellow to orange flesh. The term yam is also incorrectly applied to sweet potatoes in US, most often when referring to the darker-skinned, orange-fleshed variety. In fact, true yams are a very large tuberous vegetable eaten in Africa and the Caribbean. Sweet potatoes contain more beta-carotene than carrots plus vitamin C and fiber. In contrast, true yams have no beta-carotene. Ingredients: 1 medium sweet potato (about 8 ounces), scrubbed 2 Tbsp. olive oil 1 tsp orange zest 1/4 tsp salt freshly ground pepper 1 tsp thyme Directions: Heat the oven to 325°F and arrange a rack in the middle.
Slice the sweet potato into very thin rounds using a mandoline slicer. Mix together olive oil and orange zest in a small bowl. Bake one sheet at a time until the edges of the chips curl up, the centers are just golden brown, and the tops are dry to the touch, about 20 minutes. By Kate on March 19, 2012 I‘m always on the lookout for really easy recipes that my sons can make (there’s not always enough time for baking). I saw this super-cute teddy bear toast idea here and had to try. All you need to make this sweet breakfast is toast, banana, raisins, butter/margarine, cinnamon and sugar*. Pretty lovely huh! Check out the full recipe at kidssoup.com. Carrot and cheese stars, flowers, hearts. This is a very simple yet quite pretty bento decoration that I saw in a Japanese magazine. Just take slices of cooked carrot (I just boiled them for a few minutes in salted water, but you could use the orange carrots recipe too), stack on top of a slice of cheese, and cut through with a small cutter.
Then pop out both cut-out pieces, and insert the cheese cut-out into the carrot circle. The result is a nice bi-colored decorative piece. You can of course use the cut-out carrot part too. Just remember that you need to cook the carrot slices before you cut them out, since of course you can’t cook them after inserting the cheese! (Yes, I learned this by trial and error.) I used cheese that I sliced to to the same thickness as the carrot slices. Incidentally, I found the tiny cutters used for this in the craft section. Fun with Japanese egg molds.

They are meant for kids’ bentos, but there’s nothing to stop you from using them for yourself of course. I usually can’t be bothered to make molded eggs for everyday bentos, but for picnics and parties they are quite a lot of fun. Egg molds are offered by various online sources such as J-List and eBay merchants (see the left sidebar for some listings), as well as at 100 yen stores. There are two types of egg molds: one has a simple clamshell shape with a fastener, and the other has a inner half-shell. What size egg?
