I’m welcoming 2017 with love, productivity and… what else if not delicious and healthy vegan yums?! Had lots of medjool dates in my pantry so I used some for a quick and easy snack. Bliss balls are wonderfully delicious and packed full of energy, vitamins and all the good stuff. If you’ve never tried them, get on it! They’re seriously worth all the rolling, I promise. As to the productivity I mentioned before, new year means fresh start and I’m feeling more inspired than ever. Yields about 30 small balls 12 medjool dates (1 packed cup) ¼ cup freeze dried red fruits ½ cup cashew nuts ½ cup almonds ¼ cup chia seeds ¼ cup Sevenhills Wholefoods raw cacao powder 3 tbsp virgin coconut oil 1 tbsp pure maple syrup* enough desiccated coconut, cranberry powder and more cacao powder to coat For this recipe you’ll need a food processor (doesn’t need to be too powerful).

The first week of our trip, we were staying on the north side of the island, which during the winter and spring seasons receives a lot of rain.
