I might be harboring a slight pumpkin obsession right now. I just… I saw the canned pumpkin at the grocery store, bought a few cans, and now I can’t stop. I want to put pumpkin in everything. I’ve seen this one particular recipe popping up here and there for muffins that are supposed to taste like donuts. Now, I love donuts. Love love love. Right about now I can hear you thinking, “Yeah, that’s great, but do they really taste like donuts if they’re not fried?” Printable RecipeAdapted from Tasty Kitchen Makes 20-24 mini muffins Don’t worry – you don’t actually use the whole stick of butter for the coating, it just makes it easier to dip the muffins. Fried Ice Cream I'm sure you are thinking about Cinco de Mayo this very minute. You should be because it's in two days. We look for any excuse to celebrate. I'd share a recipe for deep fried ice cream. This would be considered one of my "BIGS". You will need a good quality Vanilla ice cream, corn flakes, flaked coconut and cinnamon. I just happen to find New Simply Cinnamon Corn Flakes. You can, of course, use regular corn flakes. You will need to make 5 scoops of ice cream from a quart size container. Drop the scoops of ice cream onto a baking sheet lined with waxed paper. Let me tell you what you don't have time for...PICTURES. The ice cream melts too fast. Put the corn flakes in a plastic bag. Pound the corn flakes with a rolling pin or crush the corn flakes anyway you'd like...just crush them. Put the crushed corn flakes into a shallow bowl. Add 1 cup coconut. Add one tablespoon cinnamon. In shallow bowl add 2 eggs and 1 tablespoon milk. Mix together with a fork. Roll the ice cream balls into the egg mixture.

Oven-Baked Apple Donuts No season makes me happier than Fall. Since moving to Montreal, the beautiful Indian summer has been one of my favourite moments of the year. Montreal weather tends to linger on (like our icy cold winters) but the peak of Fall only really last a couple of weeks so you have to learn to really appreciate it while it's here. Every morning during this time of year I can spot a new tree transitioning from green to a different shade of red, crimson, yellow and orange. There's something absolutely breathtaking to the vivid colors that nature projects in late September and October. It gets me every time. Going up to the mountain this weekend with a good cup of coffee and a warm scarf, I enjoyed a moment of peacefulness by the water. They taste just like the real thing but without being afraid of raw eggs or anything. Cookie Dough Truffles adapted from Taste of Home Ingredients 1/2 cup unsalted butter, softened3/4 cup brown sugar1 teaspoon vanilla extract2 1/4 cups unbleached all purpose flour1 (14 ounce) can fat free sweetened condensed milk1/2 mini semi-sweet chocolate chips (I used a heaping 1/2 cup full.) How-To Beat the butter and brown sugar until fluffy.Add in the vanilla and beat.Alternating, add the flour followed by the condensed milk, beating well between.Stir in chocolate chips.Scoop out 1 tablespoon balls, place on parchment paper and refrigerate for about an hour until they are firm. Apple Pie Egg Rolls – Miss in the Kitchen Apple Pie Egg Rolls I saw one of the Food Network stars making apple chimichangas and thought I had to have some for myself. I bought flour tortillas and apples, and then I used the flour tortillas for tacos. Still wanting some kind of fried apple pie dessert I used the egg roll wrappers I had in place of the flour tortillas. UPDATE: I did an interview with the Casper Star-Tribune newspaper and they made a video of me making these Apple Pie Egg Rolls! Apple Pie Egg Rolls Ingredients: 1 tablespoon butter 3 cups apples, peeled, cored, and diced 1/4 cup brown sugar 1/2 teaspoon cinnamon 5 egg roll wrappers vegetable oil for frying for garnish: 1 tablespoon sugar mixed with 1/4 teaspoon cinnamon Cooking Directions: In a medium size pan, melt butter, add apples, brown sugar, and cinnamon.
