This is a serious dessert mousse, friends. A chocolate experience so rich, velvety and decadent, a few tablespoons is really all that any one person needs. I usually chuckle when I watch Mrs. Pastry eat chocolate bars, because she nibbles them like a mouse, savoring every tiny morsel. With a little pâte à bombe on hand, chocolate mousse is a ridiculously easy thing to make. 4 ounces pâte à bombe 6 ounces semi-sweet chocolate 8 ounces (1 cup) heavy cream, whipped to soft peaks Begin by whipping the cream just about to the soft peak stage (or less), you want it a little loose and runny. Stir it until it’s uniform… The mixture will firm up here and look a little rough. No matter, I just add in about a third of the whipped cream… …and whisk it in until it’s all smooth: I then do the same with the remaining cream… …and that’s pretty much it!

Chocolate Guinness Cupcakes with Whiskey and Baileys The only way a good stout beer, whiskey, and Irish cream liquor could be better is if they were mixed together - a la an Irish Car Bomb. Better still though, would be mixing it all up with some chocolate in the form of rich Guinness chocolate cupcakes, filled with Jameson chocolate ganache, and topped with Bailys buttercream frosting. Fried Ice Cream I'm sure you are thinking about Cinco de Mayo this very minute. You should be because it's in two days. We look for any excuse to celebrate. We look for any excuse to celebrate with food. I'd share a recipe for deep fried ice cream. This would be considered one of my "BIGS". You will need a good quality Vanilla ice cream, corn flakes, flaked coconut and cinnamon. I just happen to find New Simply Cinnamon Corn Flakes. You can, of course, use regular corn flakes. You will need to make 5 scoops of ice cream from a quart size container. Drop the scoops of ice cream onto a baking sheet lined with waxed paper. Let me tell you what you don't have time for...PICTURES. The ice cream melts too fast. Put the corn flakes in a plastic bag. Pound the corn flakes with a rolling pin or crush the corn flakes anyway you'd like...just crush them. Put the crushed corn flakes into a shallow bowl. Add 1 cup coconut. Add one tablespoon cinnamon. Sky jello What you will need * 2 packages of Berry Blue Jello * 2 cups of whipping cream * 1/4 cup sugar * 2 cups of ice * parfait glasses or any clear containers that you can see through Start by placing your whipping cream in a large bowl, beat on high speed until just starting to thicken. As you continue to whip the cream slowly pour in your sugar, continue whipping cream until it forms super stiff peaks. You want to make sure that it is good and stiff so that if will hold it’s shape later in the jello. Keep chilled in fridge until needed. Now it’s time to get your jello ready. Now the fun begins! OK now with the story that preludes possibly the greatest brownie I have ever sunk my teeth in thus far in my life. (18.25 oz.) chocolate cake mix1 cup chopped nuts ( Optional )1 cup Evaporated Milk1/2 cup (1 stick) butter or margarine, melted35 (10-oz. pkg.) caramels, unwrapped2 cups (12-oz. pkg.) Method Preheat oven to 350° F.Combine cake mix and nuts in large bowl. Bake for 15 minutes.Heat caramels and remaining evaporated milk in small saucepan over low heat, stirring constantly, until caramels are melted. Drop remaining batter by heaping teaspoon over caramel mixture. Bake for 25 to 30 minutes or until center is set.Cool in pan on wire rack.

One Hundred Percent EDIBLE Googly Eyes! After more than a year of painstaking directed research by our Experimental Foods Division, we have finally achieved one of our most important longstanding goals: the production of edible googly eyes. Like many other great inventions, it seems almost simple in retrospect, but in this write up we walk through the process and show you how to make your own. To begin with, we need a food-grade rigid transparent dome that will form the outer visual shell of the googly eyes. Empty gelatin capsules like these slide apart easily and come with one such dome on each end. You can get capsules like these in bulk at all kinds of “natural” and “health food” stores– or even at many grocery stores in the section where dietary supplements are sold. Note: Vegetarians will observe that gelatin is an animal product. While the gelatin capsules have a dome on each end, they have a lot of space in between that we really don’t need.
