Just after Labor Day, the Gluten and Allergen Free Expo stopped for a weekend at the Meadowlands Exposition Center. Each year, the event wends its way across the country like a travelling medicine show, billing itself as the largest display of gluten-free products in the United States. Banners hung from the rafters, with welcoming messages like “Plantain Flour Is the New Kale.” Plantain flour contains no gluten, and neither did anything else at the exposition (including kale). There were gluten-free chips, gluten-free dips, gluten-free soups, and gluten-free stews; there were gluten-free breads, croutons, pretzels, and beer. Gluten, one of the most heavily consumed proteins on earth, is created when two molecules, glutenin and gliadin, come into contact and form a bond. Miho Aikawa photographs people eating dinner in her series, “Dinner in NY.” Miho Aikawa Growing up, both of Miho Aikawa’s parents had full-­time jobs, which made it difficult for the family to find time to spend together. As a result, it became a rule that they would gather for a family dinner whenever possible. More than four years ago, Aikawa decided to explore the many manifestations of modern dinners by photographing people eating in New York, focusing specifically on “private dinner moments, which take place regularly and more often.” Some of Aikawa’s subjects still used dinner as a time to socialize, but over the computer or phone rather than in person. Two years after Aikawa began her project in New York she started photographing dinners in Tokyo. Though Aikawa hopes her photos challenge viewers to think about their dinner habits, she doesn’t think they necessarily need to change them. Aikawa’s series, “Dinner in NY,” is on display in this year’s edition of The Fence at Brooklyn Bridge Park through October.

Gluten Confirmed to Cause Serious Weight Gain, or ‘Wheat Belly’ – Scientific Research The case against gluten seems to have been closed with recent research from a Brazilian research team that published a report in the January 2013 Journal of Nutritional Biochemistry. It seems to have put an exclamation point on the wheat belly controversy.
