MINI MONKEY BREAD

MINI MONKEY BREAD

Cinnamon Toast Rolls The USDA released its new food pyramid the other day (which is actually a plate now instead of a pyramid), and I am sorely disappointed to report that cinnamon rolls did not appear anywhere on that plate. I think by now most of us know what should be on our dinner plate in terms of healthy, well-rounded nutrient-laden meals, but it is my considered opinion that our breakfast plate should include cinnamon rolls now and then. And not just any cinnamon roll, mind you, but how ‘bout a homemade cinnamon roll hybrid that is a cross between a cinnamon roll and cinnamon toast, is super easy to make and gosh darn delicious. In honor of their ancestry, I call these little gems cinnamon toast rolls, and here’s all you need to make them… Yep. That’s it… some soft white bread, some butter and some cinnamon sugar. Trim the crusts off of the bread Roll the bread really flat Brush both sides of the bread with butter Sprinkle with cinnamon sugar Cinnamon Toast Rolls Click here for a printable recipe

Peanut Butter Banana Bread Moist and delicious Peanut Butter Banana Bread is an excellent breakfast choice for those on the run. Peanut butter, bananas and peanuts are whipped together to create a nutty spin on the traditional banana bread. Doesn’t this make you want to run into the kitchen right this second and bake this incredible bread? If it doesn’t, it should! I mean come on, just look at that peanut butter glaze just dripping off of this bread! When this bread graced the cover of Cooking Light magazine a few months ago I knew immediately it would be a hit. Honeyed Pears in Puff Pastry Poaching fruit is one of my favorite things to do when cold weather arrives. It's so warming to stand over a boiling pot of fragrant spices and lose yourself in thought. When I made these, I couldn't help but daydream as I stirred; if I were a pear... I wouldn't want to spend my days on the shelf of a cold produce department. I'd want to be taken to a warm home and placed in a jacuzzi of honey and spices. I'd want to be wrapped in an extra long puff pastry scarf and baked until golden and toasty. That sounds a little silly, but that's what I'd want... if I were a pear. The idea for these came from the Pepperidge Farm website. On a personal note, our Christmas tree is already up courtesy of Mr. Since poaching is a relatively easy task, I'll skip to some helpful tips for wrapping the pears in puff pastry. The poaching liquid has a high concentration of sugar, so your pears will be sticky. When you reach the top, tuck in the end piece of pastry behind the last spiral. 4 small pears 1/2 lemon

Homemade Doughnuts I’ve always wanted to make homemade doughnuts. I’ve made apple cider doughnuts before, but they were of the cake variety. Yeast doughnuts, however, have been on my baking to do list for quite some time. So on Mother’s Day my kids and I made the most amazing homemade doughnuts with several glazes, including maple, buttery vanilla, chocolate, white, powdered sugar and cinnamon. The chocolate is the most visually impressive, followed closely by the maple. The vanilla glazes didn’t cover as well but tasted just as spectacular as the ones that did. I don’t deep fry things too often, so it can be quite a production when I do. This is what you really want to achieve. Sorry for all the pictures, but I couldn’t pick a favorite angle, so you’re getting them all. My 14 year old son snuck down to my craft room, pulled out some construction paper and foam sticker letters to make this. :) Awww! RECIPE NOTES: I was actually out of milk. Serious Sweets: Thai Coffee Bread Pudding Above-average Joe. [Photograph: María del Mar Sacasa] The first time I had Thai iced coffee was at a little place in SoHo about a year after I'd first moved to New York. It was a tall glass filled with octopus ink-black coffee, broken up only by the sharp glint of ice cubes pressing against the sides. And then it happened: a thick ribbon of sweetened condensed milk cascaded lazily into the glass. I wanted to infuse a dessert with those heady flavors and thought bread pudding would be ideal. I've made bread pudding with everything from sliced white to croissants, but much prefer challah; it absorbs the custard nicely while retaining its shape so the pudding isn't a mushy mess. Serve this Thai coffee-inspired bread pudding with chilled orange whipped cream.
