Fancy BLT Grilled Cheese Sandwiches I almost hit you with another mile long recipe title. You’re welcome. As my final sammie for Grilled Cheese Month, the United Dairy Industry of Michigan ( ) has asked me to create one ooey gooey sandwich featuring… you guessed it cheese. I wanted to take a classic sandwich {the BLT} and fancify it by using sundried tomato pesto, peppered slab bacon, baby spinach instead of reg-o lettuce and I also whipped up a killer honey roasted garlic mayo to bring it all home. As if you need another post dedicated to showing you how to build a grilled cheese, I know. So sundried tomato pesto is pretty magical. I whipped up my sundried tomato walnut pesto that I made almost two years ago {nooo, that long?}. And then I grated up 6 ounces of Fontina cheese. The mayo… ohhhh this mayo.

Chicken Quesadillas Chicken Quesadillas are absolutely a go-to recipe in our household, but while I’ve made them on my show (and have posted different variations of quesadillas here through the years), I just realized yesterday that I’ve never posted the recipe! I’m organized and on top of things like that. Here it is! Such a simple recipe, but always delicious results. And always very, very family friendly. Then remove them from the heat and let them cool slightly. Next, slice a big, honkin’ onion into thick slices… Then grab a big bell pepper (this one’s from my garden!) And cut it into slices. And cook them until they’re nice and brown. Some of the veggies…

Epic Crispy Quinoa Burgers Topped with Sweet Potato Fries, Beer Caramelized Onions + Gruyere Where do I even begin? These burgers have so much going on. Hence the longest name I have ever posted and will hopefully ever post….hopefully! I am going to get so much flack for that title, but I don’t even care. Oh and if you can believe it, I actually left something out. Alright, let’s just start with the main idea for these quinoa burgers. I wanted to create a quinoa burger that would actually rival the typical beef burger. I know you are thinking it’s just not possible, and trust me, I totally thought the same thing. So I started with that base, but swapped the regular quinoa with red quinoa, took out the buffalo sauce and added some seasonings and cheese. From here my idea of an epic burger just grew and grew. Oh and if you are wondering, the Epic Burger is actually a thing up here in my very snowy and cold mountain town. My brothers wait all year for that burger. It’s a Christmas Day only Burger. Oh and yes, they snowboard on both Thanksgiving and Christmas day. The fried egg.
