Mini Peanut Butter Cups in a Jar Last week on Twitter, I asked you guys if you’d rather see a main course or dessert recipe for the upcoming Easter holiday. Of course, many of you vegan goblins said you wanted BOTH! I like the way you think. Actually, the majority vote was for the main course recipe, easily by a 80/20 split. Does that surprise any of you? Well, let me tell you, this isn’t a dessert that you should just look at. sigh. That was the damage I did immediately after the photoshoot. Imagine a cross between a peanut butter cup and a chocolate peanut butter torte, with a healthy, vegan twist. I wanted this dessert to be mini to keep the portion size in check, so I used these cute and portable 125ml mason jars. The first thing you do is make a chocolate graham cracker crust with graham crackers, maple syrup, coconut oil, and cocoa powder. Fool proof. I wanted these nice and crispy so I used a high temp oven and a preheated cast iron pan, but you can use whatever you want. Then I saw a photo of Rebecca Rather’s All-Sold-Out Chicken Pot Pie in her first cookbook, “The Pastry Queen.” Actually, it was a pic of two rows of individual pies, with beautifully misshapen golden crusts. I NEEDED one. One of the nice things about making your own chicken pot pie is being able to control what’s in it. While the vegetables were cooking, I started the sauce: butter, flour, chicken stock, Tabasco.
