Crock-pot BBQ Chicken Thighs We’re on the final countdown to Thanksgiving, folks. Is that crazy, or is that crazy? All I know is that I’m glad I’m not hosting the meal this year. The holiday has snuck up on me and I’ve hardly given the big day much thought. Thanks for all your hard work, Mom. This recipe has nothing to do with Thanksgiving, but it’s easy and quick and would be a perfect meal when you’ve got a house full of hungry guests lingering around post-Turkey day. I’ve made this recipe every Sunday for the past month or two. So part of our weekend routine is to cook up five days worth of a chicken + carb meal and a beef + carb meal, on Sunday night. Insert: Crock-pot BBQ Chicken Thighs I use chicken thighs for this recipe because 1) Big Fisch prefers dark meat and 2) chicken thighs are cheaper. You will need: Chicken thighs, mustard, hot sauce, Worcestershire sauce, honey, BBQ sauce, salt and pepper. Now lean in and listen up. It really is that simple. Over the past few months, I've been testing and retesting this recipe for my cookbook, and want to share a new revised version. I've loved all your feedback and incorporated some changes that'll make this General Tso's even better. The sauce, for example, has a couple of new ingredients to round out the tomato base. The biggest improvement is in the frying process. Even though I’m having a hard time letting go of summer, I do love fall. Since I’m in such a fall mood this week for Tyler Florence Fridays I made Chicken with Apple Cider Sauce served over a bed of lightly Sauteed Fresh Apples. I made this dish exactly as written except I cut down the vinegar to 1 tsp. Chicken with Apple Cider SauceRecipe adapted from Tyler Florence 2 TBL vegetable oil 4 boneless, skinless chicken breast halves **See NOTE 2 tsp kosher salt Freshly ground black pepper 3 TBL unsalted butter 1 TBL apple cider vinegar (I used 1 tsp vinegar) 3/4 c apple cider 1/2 c low-sodium chicken broth 1 TBL fresh lemon juice 1 tsp fresh thyme leaves Preheat a medium to large skillet over medium-high heat, for about 1 minute or until the surface of the pan is hot. Jalapeno Popper Grilled Cheese Sandwich April is National Grilled Cheese Sandwich month and that was all the excuse that I needed to try out some new grilled cheese sandwich recipes! Not too long ago, while I was devouring a batch of the ever so addictive jalapeno popper dip, I was thinking about other ways to enjoy that amazing flavour combination and the idea that stuck was the one for a jalapeno popper grilled cheese sandwich. As soon as I had that thought I knew that I would have to try it and this was the perfect time! The basic idea was to incorporate the flavours and textures of jalapeno poppers in a grilled cheese sandwich and the first step was the jalapeno peppers themselves. I really could not see biting into a perfectly grilled sandwich with all of the melted gooey cheese and hitting hard raw jalapeno peppers and although pickled jalapeno peppers would likely have done the trick I decided to take the extra step and I roasted the peppers first. I have an obsession with this local Persian restaurant''s chicken kebabs, they use yogurt and mustard and chicken breast and it''s sooooo divine. So I was looking for a recipe we could make at home which would be kind of similar and maybe give me some insight into the greatness behind the Persian recipe. I found this one and we tried it last nite. It took me ~5 minutes to prep it, 3-4 hours to marinate it in the fridge and 10 minutes to grill it. One important note, how I modified the recipe. The best part was I had ~2 servings with veggies and it was only like 360 calories for the chicken, woo hoo! Grilled Chicken Marinated in Yogurt-Mustard Sauce(makes 4 servings) Light a grill. Slow Cooker Pulled Chicken Barbecue 8 oz. tomato sauce, canned, reduced-sodium 4 oz. green chiles, drained, chopped 3 T. cider vinegar 2 T. honey 1 T. sweet or smoked paprika 1 T. tomato paste 1 T. Worcestershire sauce 2 tsp. dry mustard 1 tsp. ground chipotle chile 1/2 tsp. salt 2 1/2 lb. chicken thighs, boneless, skinless, trimmed of fat 1 small onion, finely chopped 1 clove garlic, minced Combine tomato sauce, chiles, vinegar, honey, paprika, tomato paste, Worcestershire sauce, mustard, ground chipotle and salt in a 6 qt. slow cooker until smooth.Add chicken, onion and garlic; stir to combine.Cover. Cook on Low for about 5 hours, until the chicken can be pulled apart.Move the chicken to a cutting board and shred with a fork.Return the chicken to the sauce, stir well and serve in bun of your choice.
