New categories for me. I’m filing this under ‘kids‘ and ‘breakfast‘. Not because it’s a specific food for children, but because my baby loves to eat this (will I ever stop calling him my baby? I somehow doubt it). It’s just a little break from the traditional way of cooking eggs and it’s actually a pretty decent start of the day, nutritionally speaking. It’s not just fun to make but they’re also great to serve because they’re oh-so simple, but look oh-so good, and not just for kids! Ingredients: drop of olive oil 1/2 small onion grated cheese 1 tomato 2oz ham 2 eggs pepper salt Directions: Preheat your oven to 350 (175c) This was a breakfast for two, so if you need more just double (or triple) the amounts. I’ve used fresh and vibrant organic/biological tomatoes for this and I must say, there’s definitely a noticeable difference in flavor. A Two Bite Breakfast: Bacon & Eggs in Toast Cups * Updated post from archive: Originally posted March 29, 2009 If you where to ask me what is my favorite meal of the day without a thought my response would be breakfast! I love breakfast! I love brunch! I love bacon! I love breggs! These little goodies are all of the above in a little two bite package. The other day I was scanning through my copy of William & Sonoma’s: Tools and Techniques. And, they are crazy easy to make. Pre-heat the oven to 400 degrees. Trim the crust and the corners off the bread, making wonky looking circles. Line a sheet pan with parchment paper and lay the bacon strips on it. Shape the cooled bacon into the toast cups, with the meaty side out. Also, if you aren’t a fan of creamy delicious runny eggs you can beat 4 eggs with a bit of milk, season and spoon into the cups. Lower the temperature of the oven down to 350 degrees. Run a knife along the edges and use a small spoon to pop them out. For the love of eggs, bacon and toast! Ingredients 6 slices of bread 6 eggs

Cinnamon Swirl Bread I made this bread late at night and poured a glaze on top to intensify it even more. I knew there was a problem before cutting into it because it was sunken in the middle. I found out that the innards of the bread were not fully cooked. Even through all of these problems, this bread tasted fantastic. Cinnamon Swirl Bread 1/3 cup sugar1/2 cup finely chopped pecans, toasted (I didn't use)2 teaspoons ground cinnamon1 cup sugar2 cups all-purpose flour1 teaspoon baking powder1/2 teaspoon salt1 egg1 cup milk (I used buttermilk for extra moistness. Preheat oven to 350 degrees. Combine 1 cup of sugar, flour, baking powder, and salt in a bowl or mixer bowl. Pour half of the batter into loaf pan. Bake for 40 to 50 minutes or until done. Glaze 1 cup powdered sugar1 1/2 Tbsp milk1/2 tsp vanilla extract (optional) Enjoy!

I Am Now In The Muffin Loop I am so sick. Of myself. Do you know what I mean? I'm just fed up TO HERE with me. Is it a stage or something? I was just going to write "I can't seem to get hooked into anything lately!" You know, I didn't have any real idea of what this ramble was going to be about but it actually came full circle for me, considering the recipe I'm going to toss out here. Let me just ask you this: have you ever had a muffin melt in your mouth? French Breakfast Muffins I never knew a muffin could be so exciting. 1/3 c. butter, melted1/2 c. sugar1 egg (preferably room temperature)1 1/2 c. all purpose flour1 1/2 tsp. baking powder1/2 tsp. salt1/4 tsp. nutmeg1/2 c. milk Topping (option: cut topping in half*)1/2 c. sugar1/2 c. butter, melted1 tsp. cinnamon Preheat oven to 350F. In a medium-large bowl, sift together all dry ingredients. For the topping, mix sugar and cinnamon in a small bowl.

Sitting cross-legged on my bed with the spine of a new cookbook spread over my lab, I'm turning pages quickly and expectantly. But I'm unsatisfied as I approach the final pages, left disappointed in the face of the index. Needless to say, I don't like the feeling. But still I find good in it; dwelling long enough generally leads to inspiration. P recently spent a a number of days considering this thought, frustrated by his current inability to bake the majority of the sweets in his repertoire while living in India. The kid's always got to be "special," you know? After a week of thinking, P developed this recipe for Monkey Balls; fried balls of sweet dough filled with cinnamon and sugar. All of which is an inspiration in itself; the staples behind the dessert have been available for decades, but have only just now been united in this fashion. What do you think?

Peanut Butter Breakfasts You all know how much I love peanut butter and how often I include it in my breakfast. That's why I was excited to hear about the Peanut Butter for Breakfast campaign put on by the National Peanut Board in honor of National Peanut Month. I have always thought that peanut butter is a great breakfast option since it goes with almost anything and has a high nutritional content. Two tablespoons of peanut butter provide eight grams of natural, plant-based protein and are an excellent source of niacin and a good source of Vitamin E, magnesium, and phosphorus. There are many ways to enjoy peanut butter for breakfast, and here are some of my favorites: Nix the protein powder and instead add peanut butter into your smoothie to add protein and other vitamins and minerals. Top your toast with peanut butter and any type of fresh fruit. Spread peanut butter evenly over a whole banana length-wise and then roll in your favorite granola or whole grain cereal.

Cinnamon Toast Rolls The USDA released its new food pyramid the other day (which is actually a plate now instead of a pyramid), and I am sorely disappointed to report that cinnamon rolls did not appear anywhere on that plate. I think by now most of us know what should be on our dinner plate in terms of healthy, well-rounded nutrient-laden meals, but it is my considered opinion that our breakfast plate should include cinnamon rolls now and then. And not just any cinnamon roll, mind you, but how ‘bout a homemade cinnamon roll hybrid that is a cross between a cinnamon roll and cinnamon toast, is super easy to make and gosh darn delicious. In honor of their ancestry, I call these little gems cinnamon toast rolls, and here’s all you need to make them… Yep.
