As you must have noticed by now, we love pizza here! It’s okay to be a pizza fiend. No, really, it is. It’s by far our favorite junk food Friday meal. Since I usually top ours with not all too much cheese, my own pizza sauce and add loads of fresh veggies, I’m not quite sure just how junky it still is. Or maybe I have a different perspective on what really constitutes junk food. I’ve tried lots of recipes over the years. What was even more depressing were all those times I couldn’t get the dough to rise no matter what I tried. Now, if you need me… I’ll be on the Stairmaster. Ingredients: 1 cup warm water 2 1/4 cup all-purpose flour 2 tsp instant yeast 2 tbsp honey 3 tbsp olive oil 1 1/2 tsp salt (2 tsp also works well) Directions: We’ll be needing yeast—I opted for instant yeast but feel free to use active dry yeast—salt and olive oil. You can either use your stand-mixer, food processor or hands for this. Add 2 tbsp honey. And add 1 cup warm water to it. Add the oil and 1 cup of flour.

Pizza Spice It’s pizza week here at Kayotic Kitchen! Time to stock up on flour and oil, everyone! I’m giving you an entire DIY pizza kit: crust, sauce, seasoning and my favorite toppings. All you need to be seriously happy and to make those around you happy as well. I’m starting with my pizza spice. So what are you waiting for? Ingredients: 1 1/2 tbsp oregano 1 tbsp dried basil 1 tsp dried rosemary 1 1/2 tbsp dried onion flakes 1/4 tsp dried thyme 1/2 tsp coarse sea salt 1/2 tsp chili flakes 7 black peppercorns 1/4 tsp garlic powder Optional: 1/2 tsp fennel seeds Directions: It’s not exactly rocket science, I’ll be the first to admit that, but getting the exact right blend wasn’t as simple as I thought it would be. Talk about storyboards! I use the spice mill that came with my food processor, but a simple coffee mill or mortar and pestle will do as well. It’s so dead-simple to make these kind of special blends yourself.

Pizza Braid A pizza braid is very kid-friendly, easy on the wallet and extremely simple to make. My aunt and cousin first introduced me to them and I’ve been hooked ever since. The possibilities are endless of the varieties you could make (check out the Apple Dessert Braid!), but the recipe below is for a very basic hamburger and pepperoni braid. You could make your own dough, but I prefer the shortcut of using Rhodes rise and bake dough. This is one of my favorite shortcuts to make a nice loaf of bread or use in recipes like this one. As I said, this is extremely basic. The dough takes a few hours to rise, so I take it out in the morning and place a towel over it. Yes, yes the dough in that photo has not risen fully. Then you spread out the sauce, lay the meats down, followed by the cheese. Then with a pizza cutter, start cutting about 1 inch thick strips down the whole rectangle. Follow the pictures above. A few minutes before it’s done I brush with olive oil and sprinkle with oregano.

Coconut Whipped Cream « Nutty Kitchen We love our whipped cream in coffee, on berries for dessert, really on any of our primal desserts. But it’s nice to have an alternative to dairy and for our Paleo friends. Henry thought it would be good to have some cold coconut milk and stuck a can into the fridge for a couple of hours. When he opened it he noticed that it had gotten very thick on top, so he scooped it out and noticed that it had separated from the coconut water. So he added a little cinnamon and a little organic vanilla extract to the thick coconut and whipped it up. So since then we’ve been enjoying our morning cup of coffee with a spoon full. So here are a couple of pictures for you – try it, it is so incredibly easy and completely gluten and dairy-free. Pizza Monkey Bread Recipe Ok are you ready for Pizza Monkey Bread. It will kinda change your life. And maybe your waistline. But it’s 100% worth it and so freaking delicious! Imagine a pull apart pizza with herbs and cheese and a warm pizza dipping sauce. It’s good. I’ve seen Monkey Bread made from scratch or with pre-made biscuit dough from the market. Stick these suckers in mini bundt pans and into the oven they go! ice candy ice candy one of the things i usually bring back from the philippines is a small packet of narrow plastic bags used for making ice candy. i am more of a popsicle than ice cream person, and whenever i have a little juice or some overripe fruit, i like to have the bags on hand so i chop or purée the fruit, add the juice, then throw them in the freezer for a future, frosty treat. ice candy is basically a popsicle made usually from a combination of fruit and water, and the one i recall seeing the most in the philippines is one made from sweetened young coconut water (buko juice) and shreds of the young coconut meat. however, you can make them from whatever your creativity or your pantry will allow. hey, any chance this qualifies for lasang pinoy 3?

French Fries: The No-Guilt Version There’s nothing like a french fried potato. The taste, the texture, the dip-ability; it’s probably one of my favorite go-to comfort foods. However, I don’t need the fat of an actual deep fried potato, and I certainly do not favor processed french fries that come from the frozen food section of the grocery store. Enter: Healthy French Fries* Step 1: Peel your ‘taters. Step 2: Cut them into strips. Step 3: Place potatoes in colander and rinse the starch off of them. Step 4: Pat down the potatoes. Step 5: Drizzle Olive Oil over potatoes. Step 6: Salt those babies up. Step 7: Mix them up so they all get coated with the olive oil and salt. Step 8: Arrange them, on a baking sheet, in a single layer Step 9: Add anything else you like. Step 10: Place the potatoes into your preheated oven for 20 minutes. Step 11: Flip and continue to bake for 5-10 minutes. And then, voila… Healthy French Fries *I usually do the same thing with sweet potatoes. Enjoy!

Grilled Pizza with our favorite Semolina Pizza Dough Summer vacation... we've been waiting for weeks, literally counting down the days while eagerly awaiting it's arrival. A time of leisurely mornings, no schedules and ultimately comments of "I'm bored... what should I do?" Well, Mommy to the rescue! Once topped, a simple flick of the wrist will slide your dressed pizza back onto the grill for the final cooking. Semolina Pizza DoughPrinter Friendly Recipe 2 tsp active dry yeast2 1/2 cups bread flour (or all purpose flour)3/4 cup semolina flour1 1/4 cup warm water2 Tbs olive oil1 1/2 tsp sea salt1/2 tsp Italian Seasoning (optional) Place all ingredients into your bread machine as directed. Perfect Pizza Crust and Roasted Garlic Chicken Pesto Pizza I've been wanting to make my own pizza crust for a really long time, but for some reason I've been hesitant. I've never been much of a bread beaker and I tend to avoid recipes that deal with kneading or rising. Yesterday, though, Ross and I decided to be brave and try making our own pizza dough for Valentines Day dinner. (On a side note: I absolutely love when Ross gets involves with a cooking project. If you're going to start making pizza dough I figured that a recipe called "Perfect Pizza Crust" was the place to start. If you're at all thinking about tackling pizza dough from scratch, search no further. I chose to throw some roasted garlic, pesto, chicken, mozzarella, and parmesan on mine, but with this dough I'm sure you could put anything on it and it would still be amazing!
