Deep Dish Fruit Pizza My sister-in-law Missy first introduced me to the concept of fruit pizza years and years ago, and here’s how: she brought one to my house and I proceeded to eat the whole thing. But it was small. And I was nursing. My mammary glands made me do it. I whipped up a whopper of a fruit pizza a couple of weeks ago using my good ol’ standby sugar cookie recipe…and it was so darn good in such a naughty, naughty way. This is one of those fun, throw-together treats that’s perfect for everything from a slumber party to a baby shower. Sorry I said mammary glands. The Cast of Characters: my sugar cookie dough (recipe below), marshmallow creme, cream cheese, peaches, kiwi, blueberries…and whatever other fruit you’d like! Now, you could divide the dough in half, then roll out each half into thin, round pizzas. Or you could do what I done did… And press the whole quantity of dough into a sheet pan. I love this pebbly texture. Then just throw it in the oven… Then just let the crust cool completely. So I deet.

Chocolate Toffee Cookie Bars Every year around this time, I start researching all my cookbooks, online sites, and blogs to find new and exciting dessert recipes for the holidays. This was one of many desserts I made over Thanksgiving weekend and it was fantastic. I love anything with chocolate and toffee, so it was hard to go wrong with this recipe. Homemade Chicken Nuggets These homemade chicken nuggets had the right texture, flavor and consistency of a standard McDonald’€s Chicken McNugget. However, it still tasted leaner (healthier) probably because I trimmed all the fat off the chicken pieces. Scroll to the end of this post for the printable recipe. I used a mixture of chicken breast meat and thigh meat, hoping the thigh meat would add some extra richness, flavor and moistness after frying. I remember back in the old days, McDonald’s used to only use dark meat, that’€s when I liked them the most. It was easier than I thought it would be. Homemade Chicken Nuggets (approx. 30 nuggets) adapted from For The Love Of Food Ingredients: 2 lbs. Directions: 1) Heat oil in a heavy-duty skillet (like a cast iron skillet) on medium-high heat while preparing the chicken nuggets – it should be ready to work with once half of your nuggets are ready to go in. 2) Cube chicken and place in a food processor. Grilled Bacon wrapped Jalapenos How I Make Hummus This is how I make hummus. Authentic hummus: love it, but that’s not exactly what I’m talking about here. This is the Lindsay-making-hummus-at-home-in-less-than-30-minutes hummus variety. Which actually is my favorite variety, because spending 30 minutes making something that lasts for lots of lunches is a time steal. In a good way. Know this. Unless you have some sort of amazing blender that can whoosh anything, everything, one hundred percent smooth and creamy – does that even exist? There’s not a nice way to say it. You’re going to start a chickpea peeling party, but then it’s going to be sort of boring and you’re going to feel crabby at me. The texture is so much better when you peel the skins off. I mean, look at that silky smoothness. Now, I think you should eat that silky smoothness. Super Easy Homemade Hummus Author: Pinch of Yum Prep time: Total time: Serves: 10-12 Ingredients 2 cans chickpeas 1 clove garlic 2-3 tablespoons olive oil up to ½ cup water ½ teaspoon salt Instructions Notes

Hummus to make or buy skinny frozen mint chocolate chip pie. An lightened-up frozen mint chocolate chip pie with a cool minty Oreo crust. No baking! When I like something, I really like something. I have 7 pairs of Nike Tempo running shorts in different colors. When I like you, I LOVE you. So when we got an invite for another party this past weekend, that pie is all I could think about. I need you to know how simple this dessert is to make. But oh my gosh. For this minty chocolate pie, I creamed together thawed fat free Cool Whip, reduced fat cream cheese, a bit of sugar, and a sprinkle of unsweetened cocoa powder. I didn’t use any mint extract in the pie, so the minty taste comes from a couple little minty extras. It’s so easy, you could do it with your eyes closed! The second mint goodie are the Andes Mints Creme de Menth Baking Chips. This lightened-up pie and my peanut butter version are perfect for parties or get togethers because they are like little stylish showpieces. Plus, everyone loves a “skinny” dessert that tastes sinful, right?

Salt and Vinegar Chick peas skinny frozen peanut butter pie. This pie. Wow. When I was brainstorming birthday cake recipes to make for Kevin’s birthday, I got a brainfreeze. I threw up my hands and asked friends on my Facebook what I should make. Lucky for my tastebuds, Kevin loves peanut butter & chocolate as much as I do, so I knew his birthday treat HAD to involve the mighty duo. AND I love a skinny dessert as much as the next girl! Using some lighter alternatives, I made one home run pie that I honestly think will be demanded at each and every birthday going forward. I couldn’t stop slicing off little slivers, which was embarrassing because it wasn’t even my own birthday. I wanted more of this pie the second it was all gone. This pie. The pie may or may not have been served to the birthday boy with a slice already taken out for picture purposes. Ingredients: Oreo Cookie Crust 24 reduced fat Oreos (or regular Oreos if you prefer) 1/4 cup (1/2 stick) light butter, melted (I used Land O' Lakes Light) Filling Directions: Adapted from Skinny Taste
