Worknight Dinner: Creamy Avocado Pasta
This post is one that’s long overdue. It’s long overdue because there are few things easier and more delicious than this pasta. I am obsessed with it. The fact that avocados are healthy for you is a delightful bonus. The Parmesan cheese? The original recipe is from Oh, She Glows and it couldn’t have been easier to replicate. There you have it. Creamy Avocado Pasta What You Need: 1 medium sized ripe Avocado, pitted 1/2 lemon, juiced + lemon zest to garnish 2 garlic cloves, to taste (Use one for a milder flavor, three if you love garlic) 1/2 teaspoons kosher salt, or to taste 1/4 cup fresh basil 2 tablespoons extra virgin olive oil 2 servings of your choice of pasta (I used whole wheat) Parmesan cheese (garnish, optional) How-To: Cook spaghetti according to the directions on the package. Potato, Cheese & Mushroom Pie | Better Recipes
For Crust: Combine flour, grated cheese, salt, and cayenne pepper in a large bowl; toss to blend ingredients. Using a pastry blender or two knives, cut butter bits and shortening into flour mixture until crumbly. Add the ice water and toss with a fork until the water is incorporated. Form dough into a ball and wrap in plastic wrap; chill for 1/2 hour. Roll out half the dough into a 10-inch round on a lightly floured surface; fit dough into a 9-inch pie tin, leaving a 1/2-inch overhang. For Filling: In a large bowl, combine the potatoes, diced cheese, flour, parsley, salt, and cayenne pepper. Heat oven to 425 degrees. Bake pie for 15 minutes.
