Here I go again, posting this recipe for the second time. As you have probably figured out by now, I deleted my baking blog, and recovered everything except for the last two posts that I had made. This is really, honestly my favorite casserole type chicken dish. I probably could eat it every night! There are a lot of varieties of this recipe out there, but you have to try making this one with homemade sauce, and not canned soup. 1 – lb. fresh broccoli Break in pieces, and steam for 2 minutes.3 cups cooked chicken breasts – Break up in small pieces3 cups Grated Cheddar Cheese divided2 tubes Ritz Crackers1 stick melted butter1 tablespoon poppy seedsSAUCE:⅓ cup Butter- melted¼ cups Cornstarch, dissolved in ½ cup COLD Water⅓ cup Chicken Broth¼ tsp. In greased 13×9 pan, layer the broccoli and chicken, then set aside.In saucepan over medium heat, combine the melted butter, cornstarch dissolved in water, chicken broth, seasonings, and milk.

MONDAY'S MENU {Baked Fried Chicken} This is, hands down, a family favorite! Everytime I make this everyone goes nuts! I have actually made it a lot easy! It is super easy, so it is easy for big groups! I made it for our little family. I am pretty sure that I have discovered the KFC secret recipe! This is super easy and you are TOTALLY going to love it! {Baked Fried Chicken} Place thawed chicken breast tenderloin strips in a bowl of milk. Mix in a Gallon Size Ziploc or Large Bowl: 1/2 tsp. 1 T Season All 3/4 tsp Pepper 1 c. 2 tsp. Preheat oven to 400 degrees. Spread melted butter around the bottom of the pan. Shake excess milk off of chicken and completely coat each piece with the seasoning mix. Place each piece of chicken in the pan. Cook for 20 min.

Cheesy Cauliflower Bake I mentioned yesterday that I had a life-changing side dish to share with you. Here it is. And I hope you make it. Before this dish, cauliflower didn’t rank very high on my veggie-loving list. {Update 03/14}: I updated pictures on this lovely little recipe as well as editing a few parts of the recipe (omitting garlic from the bread crumbs, offering panko as a worthy substitute to the homemade bread crumbs, and a few other details). Freezer Meal: Creamy Chicken Enchiladas - HotCouponWorld.com In my ongoing quest to cook and freeze more meals so that we are tempted to eat out less I came up with another recipe that is easy to prepare and used ingredients I had on hand in my stockpile. This one should definitely go in the “freezes beautifully” section of the cookbook. Printable Recipe Ingredients: 4 chicken breasts, cooked and shredded2 (8 oz.) packages cream cheese, softened16 oz. cheddar or jack cheese, shredded2 (4 oz.) cans Ortega diced chilis9 (10 oz.) cans green enchilada sauce32 fajita sized flour tortillas Directions: With a mixer, beat the cream cheese with the green chilis and 1 can of enchilada sauce. Pour cream sauce over shredded chicken in a bowl. And stir to combine. In the bottom of 4 foil baking pans (I purchase these at Dollar Tree 2 for $1.00) pour 1 can of green enchilada sauce and spread evenly to cover bottom of pan. Now take your tortillas and fill generously with the creamy chicken mixture and roll up. Sprinkle top of enchiladas with cheese.

There's something about the buffalo chicken and blue cheese combo that really appeals to me and I had a craving for it lately. When I came across a recipe for ham and cheese stuffed pretzel bites, I figured I could substitute it with chicken and blue cheese. That's when I decided to make these Buffalo Chicken Bites... yum! These are such an awesome snack, which could be a meal in itself if you have enough of them. I plan on making these again and experimenting with other fillings such a steak, provolone, sauteed peppers and onions for Philly Cheesesteak Bites... or even pepperoni, italian sausage, mozzarella and mushrooms for Pizza Bites. Raise your hand if you’re getting just a teeny, tiny bit excited for Fall. **Looks left, looks right…slowly raises hand** Shhhh! It kind of makes me paranoid, and is a constant reminder of the looming season that shall not be named. But it also kind of gets me excited to make Fall’s finest food – make that food group.
