Outback Style Baked Potato

Crash Hot Potatoes Man, do I love Australia. First, my oldest daughter was conceived there on our honeymoon…and while we’re on the subject, have I ever shared with you that we almost named her “Sydney” as a nod to her point of origin? In the end, I chickened out, though—I thought that might be a little corny, and truth be told, I think she was actually conceived in Brisbane. But I’ll stop there. This is a family-friendly website. Anyway, I just love Australia. They’re so simple, it’s terrifying. For now, though, let’s take a chill pill and make Crash Hot Potatoes! The Cast of Characters: New Potatoes (or other small, round potato), Olive Oil, Kosher Salt, Black Pepper, and whatever herb you like. Begin by bringing a pot of salted water to a boil. Add in as many potatoes as you wish to make, and cook them until they’re fork-tender. Oh! Next, generously drizzle olive oil on a sheet pan. This will mean the difference between the potatoes sticking and not sticking, so don’t be shy here. Or something. That’s it!

Morsels and Musings: grilled avocado w melted cheese & hot sauce Snacks are wonderful. Even better when they’re quick and easy to make. This is my lazy fall back dinner. Assemble, grill, eat. After a long day at work, when all you want to do is crash on the sofa and watch TV, this is the kind of comfort food I turn to: quick and delicious. Grilled Avocado w Melted Cheese & Hot Sauce Anna's very own recipe. Ingredients: 1 avocado 1 tablespoon chipotle sauce (Tabasco or Louisiana) 1 tablespoon lime juice ¼ cup parmesan cheese Salt and pepper Method: 1. 2. 3. 4. Eat hot with a wedge of lime and chipotle sauce on the side! Avocadoes are wonderful fruits, which is why I've chosen them as my theme ingredient for WHB in 2007 (cold avocado soup from the Ivory Coast), 2008 (avocado shake from Vietnam) and 2009 (prawn salad from Mexico). The word avocado comes from the Aztec (Nahuatl) word ahuacatl, via Spanish aguacate and means “testicle”. Propagation by seed takes around 5 years to produce fruit and the quality is never as good as the parent tree.

Baked Sweet Potato French Fries with Parmesan & Cilantro……Meow My son insists he is a cat. Our cats do not get wet food for lunch but are allowed to snack on dry food and water all day. Therefore, my son stated that he no longer eats lunch. He changed his mind after I dropped a plate of these babies on the table and told him that once he starts eating lunch, I will make a bigger batch. Needless to say, I did not get to eat more than one. Baked Sweet Potato French Fries with Parmesan & Cilantro Ingredients: 4 sweet potatoes 2 Tablespoons olive oil 1/3-1/2 cup grated Parmesan cheese A handful of fresh cilantro, roughly chopped Salt and Pepper, optional Directions 1. 2. 3. 4. 5.

I’ve had the “cheese” sauce in jars and in cans. I finally went looking for recipes to make nacho cheese sauce from real food. Ingredients 1½ tablespoon butter 1 tablespoon corn starch ½ cup evaporated milk 1 ounce cream cheese, cubed 1 cup sharp cheddar cheese, shredded 1/8 cup Monterey Jack, shredded ½ tablespoon hot sauce (to start, see below) 1 tablespoon paprika Directions Some recipes work well when you prep one ingredient, put it in the pot, then prep the next. Shred the cheddar and the Monterey Jack. I forgot how soft Jack cheeses get when they warm up. Melt the butter in a heavy-bottom sauce pan. Stir in the corn starch. Add the milk. Chop the cream cheese into small cubes so it will melt faster, and stir into the butter and milk until it’s melted and smooth. Add the cheddar and stir until it is well melted. Add the Jack and stir again. Add the paprika. Same goes for the hot sauce.
