Mini Pumpkin Pies in a Muffin Tin

I love to bake in muffin tins. They are cute, bite-sized, and cook up so much faster. I’ve shared Muffin Tin Meatloaves and Pop Up Pancakes in Muffin Tins. Today, I’ve baked cute mini pumpkin pies in a muffin tin. They make for perfect individual portions. These would be a great way to prepare your pie for dessert this Thanksgiving. Whoopie Pies Two pieces of moist chocolate cake with marshmallow icing sandwiched between them = a whoopie pie. My friend Noelle was visiting me this weekend and we had important plans to drink copious amounts of tea, eat dim sum, and visit a show at the art gallery. I hadn't planned on baking anything but that changed after my boyfriend and Noelle watched a show about whoopie pies. They decided that I needed to make them ...make them right now. Their request/demand was followed by the two of them pretending to eat whoopie pies to show me how good they would be and how happy it would make them. We brewed up a pot of tea and Noelle hung with me in the kitchen while I got baking. butter, sugar, and egg creamed together, and then flour added to the creamed butter-sugar along with some milk. The batter is a bit thicker than regular cake batter and you scoop tablespoons of it onto parchment paper. Oh my god these are good. If you haven't tried these yet you should get baking! Cheesecake Stuffed Strawberries Cheesecake Stuffed Strawberries These cheesecake stuffed strawberries are the perfect dessert treat! Can I just say that I have died and gone to heaven. Making up the filling was a breeze too. Cheesecake Stuffed Strawberries Yield: 10 - 12 strawberries (depending on size) Prep Time: 10 minutes Cook Time: 0 minutes Total Time: 15 minutes Ingredients: 1 pound large strawberries 8 ounce block cream cheese – softened 3 – 4 tablespoons powdered sugar (depends on how sweet you want the filling) 1 teaspoon vanilla extract (or use almond, lemon, etc. ) Graham cracker crumbs Source: Inspired by pictures seen on Pinterest Directions: Rinse strawberries and cut around the top of the strawberry. Combine cream cheese, powdered sugar and vanilla with a mixer or by hand. You could also drizzle or dip strawberries in chocolate if desired. Enjoy!!! Fun Summer Dessert: Watermelon Pie One of my summertime childhood memories is eating the yummy watermelon sherbet dessert at Friendly’s restaurant. I loved it, so I decided to try to replicate this dessert for my own kids’ summertime memories! I made some “watermelon pie” for our 4th of July feast this year…to great success! The best part…watermelon pie was super simple to make! Ingredients: - Lime Sherbet - Vanilla ice cream or Pineapple sherbet - Red/Pink-colored sherbet…I couldn’t find this, so I bought Raspberry/Pineapple/Orange swirl sherbet, mixed it up with red food coloring and it was perfect! Directions:1. A funny tip…I served the watermelon pie on paper plates, but wanted to take a nice picture for this post, so I put my own slice on a real dish. Chocolate Pudding Pie This chocolate pudding pie is amazing! It's creamy, has a deep chocolate flavor, and still manages to be a light dessert. After it got all prettied up with some white chocolate lace it was ready to be the perfect pie for my mom's birthday dinner. Since chilled pies can't be decorated with icing like a cake nor baked with pie crust designs I decided to pipe a simple lace design with melted white chocolate. While the chocolate lace was chilling in the fridge I made the pie crust using Michel Roux's recipe from his book "Pastry Savory and Sweet". For some reason I am currently without a rolling pin.. ..Thank god I have a clean empty wine bottle in a sock monkey cover. Obviously I had to remove the sock monkey before actually using the wine bottle to roll out the chilled dough. The pudding is made from whole milk, cocoa powder, corn starch, and bittersweet chocolate. Voila! ..Presents! Happy Birthday Mom! Rainbow Cake in a Jar I’ve always had a penchant for sunshine in a jar. Doesn’t the very phrase itself, “sunshine in a jar,” roll off your tongue and fill your mouth with magic? While I’ve never yet found myself a sunshine in a jar, I think we may have just concocted it in our kitchen tonight. In this simple recipe, a basic white cake is turned into a slew of bright colors, baked to perfection, then topped with a creamy white frosting. Cakes baked in jars can be topped with traditional metal canning lids and stored in the fridge for up to five days. They make a great treat to ship to someone, so long as you can ensure delivery to it’s final destination within 3 days. cobbler baked in jars I made these for the Seattle Bake Sale for Share Our Strength organized by Frantic Foodie (thanks Keren!). I had so much fun making pies in jars that I figured this was the perfect opportunity to bake something else in jars. This time I used half-pint wide mouth jars, a nice size for a bake sale. (Half pint jars washed and drying.) I used the blueberry cobbler recipe from Baking Illustrated. (Look! These are great for bake sales because the packing is an eye catcher. The recipe, with notes on actually making it in jars, is below. Seriously, the cornmeal added to the biscuit batter makes all the difference here. I call this mise en jars, I used the washed jars from the overflowing and sticky (but sooo worth it) test batch. For each batch I used a 10-ounce package of frozen wild blueberries and, for the sake of economy, filled out the rest with locally grown (and gorgeous) frozen blueberries that are sold in 48-ounce bags. Caramel Tart-Caramel Tarts-Chocolate Tart-Chocolate Tarts-Pasta Frolla Posted by Grace Massa Langlois on Friday, 8th July 2011 When I finally decided on Lemon Meringue Tarts for the holiday weekend I knew I would have to offer another choice because not everyone in my family is a fan of citrus desserts. It didn’t take me too long to decide on the other option because everyone in my family loves chocolate. I decided immediately to pair the chocolate with luscious caramel. I also wanted to add a few different textures and flavours. I present to you pure indulgence, Chocolate-Caramel Tart – crispy, hazelnut sweet short pastry with four layers of goodness – caramel, toasted hazelnuts, dark and milk chocolate ganache, and milk chocolate glaze. I could have stopped with the dark and milk chocolate ganache layer but the chocolate lover in me took over. Wow! The classical pairing of chocolate and caramel is one of my favourites but adding toasted nuts brings any dessert to another level for me. I wish the kids enjoyed the pairing as much as I do. Tiramisu Pancakes A few days ago, I put a call out on Twitter for help. Marscapone help, to be specific. These photos and recipes are from Ivory Hut - enjoy! ~Jaden These amazing Tiramisu Pancakes started out as a casual idea spurred by a tweequest for things to do with half a cup of mascarpone, and the fact that I had just posted a pancake recipe on my blog. The maple-butter glaze is optional, but it gives the pancakes a nice boost of sweetness and extra maple flavor to remind you that these are, in fact, pancakes.
