We had a rough weekend. Without getting into too much detail, my baby girl had a stomach bug and my husband had food poisoning from a local fast food joint. Our washing machine was on overload. After a full day out of commission I joked to my husband that he might have to cancel his golf tee time the following day. I guess you could say I’m in need of a little relaxation. If you’re pampering the mom in your life this weekend, fix her these French Toast Roll-Ups. Just take regular soft white bread and cut the crusts off. Using a rolling pin, flatten the pieces out. Place whatever filling you like inside towards the end of the piece of bread. Nutella with strawberries is really good too. Roll those babies up. Dip them in an egg/mixture just like you would regular French toast. As soon as you’ve browned them in a skillet roll them in some cinnamon/sugar. Breakfast is served! I admit that Buffalo Chicken Pizza coinage would have some downsides. Wallet design would need to be reevaluated, since current billfolds are not sized for pizza slices. Bacon Egg Cups I was never a big breakfast eater. Not to say I didn’t eat breakfast, i just didn’t like breakfast foods. Correction, cinamon rolls have ALWAYS been very well received. Eggs, eggs were especially gross to me as a kid, teenager and even into my early 20’s. So 10 years ago I would not have liked these bacon and egg cups, mainly because of the egg. Makes 12 cups12 slices bacon8 eggs1/2 cup shredded cheddar cheesepinch of salt1/4 tsp black pepper Preheat oven to 350 degrees. Whip the eggs, salt, pepper and cheese with a fork. Fill each bacon lined muffin cup 3/4 of the way with the egg mixture. Bake for 30-35 minutes, until the egg cups are golden brown and don’t jiggle. Each cup is about 100 calories. Update *May 2012*: It seems like a lot of people have had great success making these, but have partially pre-cooked the bacon.
