Sweet Potato Biscuits with Honey Cinnamon Butter Have you given up on making biscuits? Do they seem like too much trouble for the end result? I was kinda in that boat. There are far more interesting things to make…or so I thought! I made these for the first time last fall to go with some Thanksgiving leftovers. And to make a good thing even better, they always turn out great! And because I live in the land of biscuits and honey, we top it all off with some must-have honey cinnamon butter! Gather Up:2 cups cooked, mashed sweet potatoes 1 stick butter, melted 1 ¼ cups milk 4 cups self-rising flour Pinch baking soda 3 tablespoons sugar For the Honey Cinnamon Butter:1 stick butter, room temperature 3 tablespoons honey ¼ teaspoon cinnamon Pinch kosher salt Mix together the sweet potatoes, butter and milk until well blended. Shape the dough into a ball and knead about 10 times on a well-floured surface. Roll the dough out about ¾ inch thick and cut with a 2-inch biscuit cutter. Serve warm with the butter.

Perfect example: I was in a meeting a few weeks ago at the office. What was the best way to make them? Ah, the Frankenroll This recipe borrows heavily from two fairly unrelated things. To make these rolls, spread pizza dough liberally with melted butter, sprinkle it with cheese and spices, roll it up like a stromboli—then slice and bake like a pan of cinnamon buns. The result? Fill them however you like The best part about these rolls? This is what I always refer to as a Sliding-Scale Recipe. You can toss it together with a ball of pre-made dough and a bag of shredded cheese from the grocery store—or you can go all out and make the dough from scratch and grate your favorite cheeses by hand. French Fries: The No-Guilt Version There’s nothing like a french fried potato. The taste, the texture, the dip-ability; it’s probably one of my favorite go-to comfort foods. However, I don’t need the fat of an actual deep fried potato, and I certainly do not favor processed french fries that come from the frozen food section of the grocery store. Enter: Healthy French Fries* Step 1: Peel your ‘taters. Step 2: Cut them into strips. Step 3: Place potatoes in colander and rinse the starch off of them. Step 4: Pat down the potatoes. Step 5: Drizzle Olive Oil over potatoes. Step 6: Salt those babies up. Step 7: Mix them up so they all get coated with the olive oil and salt. Step 8: Arrange them, on a baking sheet, in a single layer Step 9: Add anything else you like. Step 10: Place the potatoes into your preheated oven for 20 minutes. Step 11: Flip and continue to bake for 5-10 minutes. And then, voila… Healthy French Fries *I usually do the same thing with sweet potatoes. Enjoy!

Panko Mozzarella Sticks! – Tasty Kitchen Blog I first discovered panko bread crumbs back in 1999. Please don’t ask me how I know that; I just do. I remember vividly reading a recipe that contained panko bread crumbs, and I remember vividly that I was nursing my second baby, and I remember vividly that I was hormonal and desperate, and the next thing I knew I was ordering panko bread crumbs from some market in Chelsea that the magazine recommended. On the phone, of course, because although I had a computer at the time, I certainly wouldn’t have been cool enough to use it to order panko bread crumbs. Plus, I was nursing. Not enough hands. Panko bread crumbs, in a word, are delicious. Panko are Japanese breadcrumbs, and are lighter and flakier than regular breadcrumbs. When I set out to make a recipe with panko bread crumbs, I started in the direction of something Asian/exotic. So guess what I did? Let me back up: my family LOVES fried mozzarella sticks. Grilled Corn and Tomato Fettuccine | How Sweet It Is - StumbleUpon Last summer I fell in love with a million things. Nude nail polish, avocado toast, baked beans on top of eggs and super long walks with lots of gossip to name just a few. Oh and cold beer. A little late on that train, but…. better late than never. By far, the cream of the crop was grilled corn. Anywaaaaay. Grilled corn is the bees knees. It became a thing. An addiction. Sooo… I also grilled the tomatoes, which was in a word… awesome. Grilled Corn and Tomato Fettuccine serves 2-4 1 pound whole wheat fettucine 4 large ears of corn 3 vine tomatoes, cut in half 1 green pepper, seeded and sliced 2 garlic cloves, minced 1/4 cup + 3-4 tablespoons olive oil 1/4 cup parmesan cheese salt and pepper Preheat the grill on the highest setting. Boil water and prepare pasta according to directions. Once corn is finished, unwrap and let cool for a few minutes. Summer rocks my world.

Pumpkin-Shaped Cheese Ball Recipe | lolfoodie I have made a cheese ball for every party I’ve ever hosted, and this year is no different. They are usually a pretty big hit, but I don’t mind leftovers because it makes a great snack for the next day when I’m cleaning up after the party. In the past, the cheese balls I made were mostly cream cheese with a little bit of shredded cheddar and parm and a few herbs. To make one cheese ball (approx 15 appetizer servings), you will need: 11 ounces of goat cheese, softened8 ounces of cream cheese, softened1 pound of sharp cheddar cheese (any combo of yellow or white), shredded (I used a food processor)1/2 tsp Worcestershire sauce1/2 tsp dried chives (fresh would be better, if you have them)1/2 tsp garlic powder1/4 tsp dried oregano1 braided pretzel (for stem)1 parsley sprig (for leaf) Cheese, glorious cheese! Normally, I grate cheese with my Microplane, but since I had so much to grate today, I used my food chopper/processor. In a large bowl, combine all ingredients until thoroughly mixed.

Slow- Baked Mac and Cheese Recipe Courtesy of "Not Your Mother's Slow Cooker Recipes for Two" Ingredients 1 1/2 cups milk One 12 oz can evaporated milk (I used skim, evaporated milk keeps the egg and milk from curdling) 1/4 cup (1/2 stick) unsalted butter, melted, cooled to room temp 3 large eggs 1/2 tsp salt 3 cups (12 oz) shredded cheese (I used an Italian blend, recipe calls for Italian fontina cheese) 1/2 pound elbow macaroni or mini penne tubes, par cooked and drained (this means cook them for about five minutes until tender but not completely cooked) Freshly ground black pepper to taste 1/2 cup grated Parmesan cheese Spray the inside of your slow-cooker with cooking spray or grease it with olive oil. Add the shredded cheese (not the Parmesan) and macaroni, sprinkle with black pepper (and whatever other spices you want to use). Sprinkle the Parmesan cheese on top. Serve and enjoy! Fried Dough Mozzarella Bites These weren't as crazy amazing(cramazing?) as they look and sound, but they were still very good. They definitely need a few tweaks though to become a perfect recipe. Little Cubes of mozzarella. I just used store bought pizza dough to wrap the cheese in. Right away I dunked them into a bowl of flour so they wouldn't be sticky. You can already see the cheese explosions. Still, really fun and really tasty. I'm gonna revisit this idea, it might not be for awhile, but it's gonna happen.

French Onion Mac & Cheese Printable Recipe Ingredients: 6 tablespoons unsalted butter 2 tablespoons olive oil 3 large yellow onions, sliced (9 cups) 1 pound cavatappi pasta 1/4 cup all-purpose flour 2 1/2 cups milk (I used 2%) 2 cups shredded fontina cheese 2 cups shredded asiago cheese 8 ounces mascarpone cheese 1 teaspoon salt 2 cups croutons 3 cups shredded gruyere cheese Meanwhile, prepare pasta according to package directions.
