Pop Up Pancakes

Pop Up Pancakes
We love to eat breakfast for dinner, it’s easy and I have all the ingredients. One of our favorites is Pop Up Pancakes, or as my husband’s family calls them, German Pancakes. I like to put a little twist on them by cooking these in muffin tins. They cook up as little puff balls and are easy for the kids to eat. Fluffy Pancakes | Blogger For Hire This pancake recipe is the result of mixing and matching different recipes from many different sources. It is the result of trying and failing so many times, that I almost declared pancakes as the one breakfast recipe I couldn’t master. But I persisted, and this recipe is perfect – as perfect as a pancakes recipe can be, because making pancakes does involve frying, and frying is something that each of us needs to play with. It changes depending on your type of stove (gas or electric), on how hot the skillet is, and on how evenly hot you manage to keep it while frying multiple batches. But the instructions here are as close as it gets to “perfect,” and the result? This recipe makes 16-18 pancakes. Fluffy Pancakes Makes 16-18 pancakes. Blueberry-Mint Ice Cream Sandwiches My best friend from school came to visit this past weekend. She has quite the sweet tooth, is known for the adorable cupcakes she makes, and also loves baking and decorating. We're living across the hall from each other next semester...the amount of cupcakes that will be baked, decorated, and finally consumed is too much for me to calculate. I promised my friend that I'd let her be the first "guest" on my blog. Actually making these things was QUITE the process. The original mint ice cream recipe we found called for three (!!!) Cinnamon Roll Pancakes Updated 9/22/11 to Add: If you’re coming here to sample these delicious Cinnamon Roll Pancakes, you just might like the latest recipe that I’ve posted for Pumpkin Cinnamon Roll Pancakes too. And Gingerbread- Cinnamon Roll Pancakes too. Enjoy! Here’s a short video sharing how to make these delicious pancakes: If you’ve ever thought you needed a reason to eat pancakes, today is the day: National Pancake Day! How do you like your pancakes? But recently I started dreaming about mixing cinnamon rolls and pancakes together… and this is what I came up with- my new favorite pancake: Cinnamon Roll Pancakes. I have a wonderfully fluffy pancake batter that I like to use (recipe below) so I swirled a bit of cinnamon roll filling into the pancake. And they cooked up just like a pancake- fluffy, but with craters of crusty, sugary cinnamon swirled within. You might find three of these stacked in a fancy breakfast restaurant, but I’m gonna tell you that one pancake is all you need. Oh yeah. Ingredients:

Baked Eggs in Bacon Baskets This is such a nice idea for breakfast/brunch for a crowd. It is so simple, makes 12 at a time and the baskets stays warm, unlike scrambled eggs which always seem to get cold when left on the plate. There are many variations of this recipe on the blogosphere. I've tried it 2 weekends in a row, and I find that this method worked best. Spray a 12 cup muffin tin with PAM spray. Lightly cook 12 strips of bacon (or how ever many baskets you are making).Do NOT cook the bacon till crisp, but just enough to get rid of some of the grease. Coil your bacon slices around the wells of the muffin tin. Crack an egg and pour into the well.Sprinkle with salt and pepper. You can also whisk your eggs together and add some cheese, like a quiche, and pour this mixture into the bacon baskets. I baked them 375 for 10 minutes for a runny center (to soak up with toast), or 12 minutes for the scrambled & cheese version. Use a spoon to remove the baskets and serve!

Cinnamon Bun Pancake Recipe When two people tell you that these are the best pancakes they have ever eaten, then you know that they are good. These pancakes are exactly what you want when you are craving a cinnamon bun but do not have the time to make them. These are sweet, cinnamony and fluffy. To make something delicious over the top, instead of maple syrup (which is also delicious), top them with cinnamon bun icing. Nothing short of amazing. This recipe is indeed a treat, but it is also a great recipe to try experimenting with whole wheat flours. *adapted from this recipe from Tasty Kitchen* 1 1/2 cups flour 3 Tablespoons sugar 1/2 teaspoon salt 4 teaspoons baking powder 1 Tablespoon cinnamon 2 eggs, beaten 1 cup milk 2 Tablespoons maple syrup 1/4 cup melted butter 1 Tablespoon vanilla Put all of the dry ingredients in a bowl. Whisk the dry ingredients together. Add the wet ingredients and whisk together until well combined. Preheat a griddle or large saute pan over medium heat. To make the frosting:

Alfajores It's time for another short and photo-filled post. Not that that's a bad thing. I think these cookies are super pretty. Alfajores. These are one of my favorite cookies...ever. They're nothing fancy, really. Alfajores are a very popular cookie in Argentina, and you can find them in bakeries and shops all over Latin America (which is a good thing, because these cookies are just so good!) Like any other cookie that requires rolling out and shaping via a cookie cutter, these cookies take some time and prior planning, because the dough needs to be refrigerated for a couple of hours before any of that can happen. They're also assembly-type cookies...I don't know about you, but I actually really love assembly type cookies. Stay tuned later this week (aka Thursday/Friday, after I finally finish finals...!!!!!!!!!!!!!) Gradually begin to add the dry ingredients to the creamed butter mixture, and mix just until everything is incorporated and has come together into a ball of dough.

Tiramisu Pancakes A few days ago, I put a call out on Twitter for help. Marscapone help, to be specific. Many people came to the rescue, however it was @Ivoryhut her responded with a recipe idea that went beyond delectable. Tiramisu Pancakes. oh. hell yeah. Why not have dessert for breakfast? huh?! And while you're at it, come visit Ivory Hut food blog - This woman can make bread, the most beautiful striped bread even! These photos and recipes are from Ivory Hut - enjoy! ~Jaden These amazing Tiramisu Pancakes started out as a casual idea spurred by a tweequest for things to do with half a cup of mascarpone, and the fact that I had just posted a pancake recipe on my blog. The maple-butter glaze is optional, but it gives the pancakes a nice boost of sweetness and extra maple flavor to remind you that these are, in fact, pancakes. I also maintain that, as decadent as it sounds, it might be a tad healthier than regular pancakes because you're not drowning it in syrup. ~Ivory Hut Tiramisu Pancakes Instructions:

Tiramisu French Toast I have very important news. I bought some bread. It was not whole wheat. It was delicious. And fluffy. Soft and pillow-like too. Then I invested in some cheese. And for the shocking finale, I picked up some butter. Butter. It’s what I walked into the kitchen some 20 years ago and found my brother eating, fingerful by fingerful, perched on the kitchen table. True story. It’s what I live and breathe by. [I say that like you haven’t noticed. ] And it’s also what this French toast took a bath in last week. Now that is a bath I’d like to have. You probably weren’t expecting such a decadent breakfast on a Monday morning. It’s just your basic build-it-yourself French toast. No excuses. Tiramisu French Toast serves 4 1 loaf challah bread 8 whole eggs 1/4 cup cream 1 tablespoon vanilla extract 1 cup mascarpone cheese 1/2 teaspoon cinnamon 1 tablespoon instant coffee powder 1/2 tablespoon cocoa powder 1/2 tablespoon sugar 1 tablespoon honey 4 tablespoons butter maple syrup for serving sliced strawberries for serving

Crispy Spiced Waffles with Caramelized Apples I had a day off! No school and no work…so I made waffles. But now I am back in school and taking Costing and Purchasing. This recipe yield 4 servings, which is more then enough for hubby and I. The recipe requires 2 large eggs to make the 4 servings. But what if you’re having some awesome breakfast buffet for 350 people? Well first we need to have a RCF or Recipe Conversion Factor by dividing the amount we need by the amount we are given. Need / Given = RCF or 350 / 4 = 87.5 Now multiply the RCF by the amount of eggs in the recipe. 87.5 x 2 = 175 You will need 175 eggs to make these waffles for 350 people. But eggs are sold by your vender for $44.50 for 30 dzn, that is $1.48 a dzn. 175 eggs = about 15 dzn eggs It will cost you $22.20 in eggs to make waffles for 350 people. Now you know how to easily convert a recipe. Eight fat and crispy waffles was more then enough for OB and I. Whisk flour, sugar, baking powder, chinese five spice, and 1/2 teaspoon salt in large bowl to blend. Waffles Topping

Cranberry, Orange, and Pistachio Biscotti Biscotti make me feel more grown up….the fact that I’m enjoying a cookie that only has dried fruit or nuts and isn't very sweet and has no chocolate chunks or oatmeal or icing seems to be a very grown up thing, and I just don’t know if I’m totally ready for that just yet…I will contemplate this matter as I eat more biscotti. I made these biscotti with orange zest, dried cranberries, and pistachios, a nut that I did not learn to appreciate until only recently. Green nuts seemed a little weird, but I loveeee pistachios now. They’re so good. I refused to dunk these biscotti into a cup of coffee like my mom did at breakfast (I actually refused to even drink any coffee), and chose to instead have a nice tall glass of orange juice with my cookies. Anyway, these biscotti were actually really delicious, and really simple to make. Cranberry, , and Pistachio Biscotti Adapted from Williams-Sonoma Ingredients: Directions: In a large bowl, sift together the flour, baking soda, baking powder, and salt.

Cake Batter Pancakes I’m fairly convinced that the world would be a better place if more sprinkles were involved. I know. I just made pancakes. It seems I have an unnatural obsession with cake batter. Well I do. But hear me out. When I develop recipes, I try to make all of them for a purpose. Case in point: it isn’t anyone’s birthday. But I don’t need an excuse to eat cake and sprinkles. And because pancakes always need some sort of topping, I went with a sprinkled glaze. Because nothing goes better with cake than more sugar! These are just plain fun. Sure, they would be best for a special occasion like a birthday, but they also work on a random Saturday in January when it’s -2 degrees outside and all you want to see is some sunshine. That wasn’t me. And yes, this means you will have an open box of cake mix, just like you did with the cake batter bark. Cake Batter Pancakes makes about 12 pancakes 1 1/2 cups all purpose flour 2/3 cup yellow cake mix 1 tablespoon sugar 3/4 teaspoon baking powder pinch of salt 2 eggs

Snickerdoodle Muffins Last Friday I finished my exams and was planning on coming home and having a baking extravaganza, but then I tripped on my cat and fell down the stairs. We're both fine, though I think he's a lot more fine than me because as soon as I felt his soft body under my foot I took all my weight off of him and slid down the stairs. Which has left me with a swollen foot. I recently discovered the insane deliciousness of snickerdoodle cookies. As for how they turned out, the muffins were incredibly moist and a great sour cream muffin texture.
