Vanilla Bean Waffles with Vanilla Syrup Waffles: 1 1/2 cups all-purpose flour 1/4 cup packed brown sugar 2 tsp. baking powder 1/4 tsp. salt 1 1/2 cups milk or buttermilk 1/4 cup canola oil 2 large eggs 1 vanilla bean (or 1 tsp. pure vanilla) pure maple syrup or golden syrup In a large bowl, stir together the flour, sugar, baking powder and salt. Preheat your waffle iron and spray it with nonstick spray or brush it with oil. Meanwhile, pour as much syrup as you think you’ll use into a small saucepan, add the scraped out vanilla pod and bring to a simmer. Makes 6-8 large waffles. Blueberry-Mint Ice Cream Sandwiches My best friend from school came to visit this past weekend. She has quite the sweet tooth, is known for the adorable cupcakes she makes, and also loves baking and decorating. Cinnamon Bun Pancake Recipe When two people tell you that these are the best pancakes they have ever eaten, then you know that they are good. These pancakes are exactly what you want when you are craving a cinnamon bun but do not have the time to make them. These are sweet, cinnamony and fluffy. To make something delicious over the top, instead of maple syrup (which is also delicious), top them with cinnamon bun icing. Nothing short of amazing. This recipe is indeed a treat, but it is also a great recipe to try experimenting with whole wheat flours. *adapted from this recipe from Tasty Kitchen* 1 1/2 cups flour 3 Tablespoons sugar 1/2 teaspoon salt 4 teaspoons baking powder 1 Tablespoon cinnamon 2 eggs, beaten 1 cup milk 2 Tablespoons maple syrup 1/4 cup melted butter 1 Tablespoon vanilla Put all of the dry ingredients in a bowl. Alfajores It's time for another short and photo-filled post. Not that that's a bad thing. I think these cookies are super pretty. Alfajores. These are one of my favorite cookies...ever. They're nothing fancy, really. Alfajores are a very popular cookie in Argentina, and you can find them in bakeries and shops all over Latin America (which is a good thing, because these cookies are just so good!) Like any other cookie that requires rolling out and shaping via a cookie cutter, these cookies take some time and prior planning, because the dough needs to be refrigerated for a couple of hours before any of that can happen. They're also assembly-type cookies...I don't know about you, but I actually really love assembly type cookies. Gradually begin to add the dry ingredients to the creamed butter mixture, and mix just until everything is incorporated and has come together into a ball of dough.

The maple-butter glaze is optional, but it gives the pancakes a nice boost of sweetness and extra maple flavor to remind you that these are, in fact, pancakes. Crispy Spiced Waffles with Caramelized Apples I had a day off! No school and no work…so I made waffles. But now I am back in school and taking Costing and Purchasing. This recipe yield 4 servings, which is more then enough for hubby and I. The recipe requires 2 large eggs to make the 4 servings. But what if you’re having some awesome breakfast buffet for 350 people? Well first we need to have a RCF or Recipe Conversion Factor by dividing the amount we need by the amount we are given. Need / Given = RCF or 350 / 4 = 87.5 Now multiply the RCF by the amount of eggs in the recipe. 87.5 x 2 = 175 You will need 175 eggs to make these waffles for 350 people. But eggs are sold by your vender for $44.50 for 30 dzn, that is $1.48 a dzn. 175 eggs = about 15 dzn eggs It will cost you $22.20 in eggs to make waffles for 350 people. Now you know how to easily convert a recipe. Eight fat and crispy waffles was more then enough for OB and I. Cranberry, Orange, and Pistachio Biscotti Biscotti make me feel more grown up….the fact that I’m enjoying a cookie that only has dried fruit or nuts and isn't very sweet and has no chocolate chunks or oatmeal or icing seems to be a very grown up thing, and I just don’t know if I’m totally ready for that just yet…I will contemplate this matter as I eat more biscotti. I made these biscotti with orange zest, dried cranberries, and pistachios, a nut that I did not learn to appreciate until only recently. Green nuts seemed a little weird, but I loveeee pistachios now. They’re so good. I refused to dunk these biscotti into a cup of coffee like my mom did at breakfast (I actually refused to even drink any coffee), and chose to instead have a nice tall glass of orange juice with my cookies. Anyway, these biscotti were actually really delicious, and really simple to make. Cake Batter Pancakes I’m fairly convinced that the world would be a better place if more sprinkles were involved. I know. I just made pancakes. It seems I have an unnatural obsession with cake batter. Well I do. But hear me out. When I develop recipes, I try to make all of them for a purpose. Case in point: it isn’t anyone’s birthday. But I don’t need an excuse to eat cake and sprinkles. And because pancakes always need some sort of topping, I went with a sprinkled glaze. Because nothing goes better with cake than more sugar! These are just plain fun. Sure, they would be best for a special occasion like a birthday, but they also work on a random Saturday in January when it’s -2 degrees outside and all you want to see is some sunshine. That wasn’t me. And yes, this means you will have an open box of cake mix, just like you did with the cake batter bark. Cinnamon Streusel Pancakes Cinnamon Streusel Pancakes When we went to California in November, we spent a day eating our way through Los Angeles with our good friend, Amanda, from Kevin and Amanda. Amanda had a long list of food places for us to try. We started our food feast at The Griddle Cafe in Hollywood. Amanda recommended the “Recess Time” pancake, which is a double-filled cinnamon streusel pancake. The pancakes at The Griddle Cafe are humongous! We were determined to recreate our favorite pancakes at home so one morning we put our game faces on and got to work. Josh let a big scoop of butter melt all over the pancake, making the pancake even more decadent. I will warn you these pancakes are insanely sweet. Pear Pie Pop Tarts “Positive, positive, positive!!” That’s my favorite line from Knocked Up. Leslie Mann says it to Katherine-whatever-her-name-is when she’s all bummed out and can’t bring herself to get out of bed. I say it to Teri when she’s being a brat. But now that I’m a grown-up and pay taxes and parking tickets and deal with all sorts of fun stuff…I’ve made the decision that I’m gonna have pie for breakfast…and call it a pop tart. Pears are so pretty right now. In the past two weeks, I’ve bought, like, six varieties hoping to bake with them, but just end up eating ‘em before I get the chance. For this recipe, I wanted something that wasn’t super juicy, so I went with a firm Bosc pear. Let’s start with the crust. 1. That’s all. I diced up the pears really small. Jamaican Banana Fritters - ThatsSoYummy.com There’s a thing in my house that when you have ripe ol bananas either you make banana bread or banana fritters. These delicious tasty treats can be eaten morning, noon, or night, as a snack or as dessert. These fritters are so easy to make and will satisfy any craving you may have. So if you have a few of these bananas lying around your hose… don’t toss them, put them to GREAT use! Enjoy! Peel and mash the ripe bananas. Beat egg, sugar, vanilla, cinnamon, and nutmeg. Next, blend egg mixture with mashed bananas. Make sure it is all incorporated. Then sift flour and baking powder into the banana/egg mixture. Mix it all together. If the batter seems to be too thick add a little milk… I added about 1/4 cup to 1/2 cup of milk. Add oil to a frying pan and place on medium high heat. Drop spoonfuls of the banana fritter batter into the hot oiled frying pan. Flip when you see the edges starting to get brown and golden. Lastly, combine cinnamon and sugar together to create your cinnamon sugar. Ingredients
How To Make Chocolate Cobbler Growing up, we had this probably once a week. I always thought it was because everyone liked it so much but according to Mama, the frequency of this dessert had a lot more to do with it being so quick, easy, and most importantly: budget friendly. Generally, most folks have these ingredients on hand. It doesn’t hurt that you don’t even need an egg for it! As kids, we always called this “Mud Pie”. This cobbler bakes up magically. We frequently package the dry ingredients and give them along with the recipe as Christmas Gifts. You’ll need some self rising flour (see my buttermilk biscuit tutorial on how to substitute plain for self rising), vegetable oil, milk, sugar, cocoa, brown sugar, and vanilla. In medium bowl, add flour… …and white sugar. Cocoa powder.. And stir to combine. To this, add milk… Vegetable oil… and vanilla. Stir. Until it looks like this.
