Sunday Sweets: Butterbeer Cupcakes

First, cream your room-temperature butter together with your sugars until well-combined and fluffy, like so: Now beat in your eggs, one by one. Now you’re going to alternate adding buttermilk… Cream soda… And your dry ingredients (whisked together) until they’re all added. I could’ve eaten this entire bowl with a spoon. And bake for 15 to 17 minutes until a tester comes out clean and the cake springs back slightly when touched. Mmm. Now it’s time for your butterscotch ganache, which will be the filling and be in the buttercream frosting. This will be a lot thinner than your standard chocolate ganache, but don’t worry. The best way to do the filling is to buy a cheap squeeze bottle (this one was less than a dollar) and fill it with your ganache using a funnel. Now it’s time for your frosting! Serve with some butterbeer, perhaps?

Beat the egg and milk together in a pie plate or shallow dish. Spread Nutella on both slices of bread. Place the sandwich in the egg mixture and turn to coat. Strawberry Shortcake for One Hi, my name is Kate. I was born in London, I have long brown hair, and I have a younger sister. Sadly, no prince charming… yet. Despite the similarities between Kate Middleton and myself, I must confess I’ve not been keeping up with the royal wedding at all. In fact, I didn’t even realize it was so soon until yesterday, when #royalwedding tweets bombarded me on Twitter. Always up for a “theme cooking” challenge, I scrambled to create a recipe for the occasion: Strawberries-n-cream cupcake, with Healthy Whipped Cream. Or, rather, it would have been healthy cream if there’d been more time! Having not lived in England since I was a baby, I was pretty clueless about British desserts (aside from a reference to Banoffi pie in one of my favorite movies, Love, Actually). Of course, married maidens (like Kate Middleton, as of today!) For a more-traditional treat, do top with the above-linked healthy cream. Popcorn Cupcakes {Cupcake Carnival} Hello Cupcake Lovers!Here is the post I shared over at Attempting CreativeforKimberly’sCupcake Carnival! I love to take a theme and run with it for my little guys birthday parties. These are very simple and easy to put together and they don’t require any special decorating skills, I promise! You want to begin with a cupcake of your choice. To create the ‘popcorn’ you will need {1} mini marshmallows as shown in photo above. {2} Using a knife cut the marshmallow in half. {3} Squish the two cut halves back together at one end. Working in a random pattern, begin placing the prepared marshmallows onto your cupcake. To add a ‘butter’ effect to the popcorn, take a tiny bit of water, add two drops of yellow food coloring and mix well. Using a paint brush {preferably not the ones you have already used crafting =)} lightly brush on the water mixture to your marshmallows. Yummy Goodness!
