We sat at a counter overlooking the open kitchen. The brown foam is soya sauce emulsion, the jelly was made from fish and even the scales were edible. However, all that extravaganza was not even the main point. This was the highlight of the meal. Chef checked at least twice with me, that I wanted the crust. That dinner checked many boxes. That something was this little dish of "vegetables". According to the guide-book that husband referred to, this is not a new phenomenon. The good effect lasted well into weeks. So there we are, our lovely souvenir from Japan.

Ironically, comparing then-and-now pictures of the Au Bougnat building in the 17th century and the way it looks today, one is struck by the fact that little has changed. What remains are the architectural facts: the building began as a late 18th century house whose hallways were paved with tombstones that no doubt came from the numerous churches that existed in the area.
