No-Bake Strawberry Icebox Cake

No-Bake Strawberry Icebox Cake
See this? This is such an easy dessert. It looks a little fancy, doesn't it? Don't be put off. It only takes a few ingredients, and it doesn't even involve turning on the oven. I am a huge fan of icebox cakes (I even wrote a book about them!). Icebox cakes do usually call for some store-bought ingredients, but I like to tweak classic recipes to avoid boxed puddings and use simpler whipped cream or homemade custard. We recently gave you a basic formula for making a no-bake cake out of graham crackers, whipped cream, and any fruit. → Read More: How To Make a No-Bake Icebox Cake This particular icebox cake is just as simple as it gets, inspired by the buckets of strawberries at the markets in late spring, and by my favorite dessert: strawberry shortcake. The whole cake is drizzled with a quick, simple chocolate ganache, and garnished with whole strawberries. If you like icebox cakes, I'd love to share my book with you. → Buy Faith's Book! Essential Recipe: Chocolate Layer Cake Recipes from The Kitchn A discussion of chocolate cake should always be prefaced by Gourmet columnist Laurie Colwin: "Anyone who spends time in the kitchen eventually comes to realize that what she or he is looking for is the perfect chocolate cake." Each cook has decided preferences when it comes to his ideal chocolate cake, but they usually fall somewhere on the spectrum of Colwin's three types: flourless, fudgy, and cocoa. Today what I have for you is the third on that list: a tender, moist, fluffy cocoa cake that is still deep, dark, and chocolatey. Oh, and super quick. Some chocolate cakes are completely flourless — quivering mousses of pure cacao. Others are closer to a brownie with a crackly crust.

Molten Lava Chocolate Chip Cookie Need I say more? Just yum! Go make a couple of these! Made a batch of chocolate chip cookie dough. Baked most of them as these: Then I did this: Cupcake Rampage: Hummingbird Cakes I know what you’re thinking: Hummingbird cake? WTF? That’s okay, I’d never heard of it, either. You could call this the third leg of a twisted Triple Crown of Southern-style baking, following the Kentucky Derby day mint julep cupcakes and the beloved red velvet ones before that. To carry the analogy further, if red velvet is Man o’ War, and mint juleps are Secretariat, then hummingbird cake would be Seabiscuit. Get it?

Slutty Brownies - StumbleUpon Now I don’t want to over sell this, so I’m going to be conservative and simply say, that these are… The Best Brownies In The WORLD. I know, big statement. They’re called Slutty Brownies because they’re oh so easy, and more than a little bit filthy. They’re best served warm from the oven, with good quality vanilla ice cream (devastatingly I didn’t have any in the freezer this time, so I guess I’ll just have to make them again). They take about 45mins to make, including baking time. Fried Ice Cream I'm sure you are thinking about Cinco de Mayo this very minute. You should be because it's in two days. We look for any excuse to celebrate. Cherry-Almond Poke Cake I'm a big fan of repairing reputations. I believe most things start off with the best intentions, but sometimes take a wrong turn, start running with a bad crowd, and need a loving hand to get back on track. This, I'm afraid, is what happened to poke cake. Although I can't say for certain, I'm guessing this simple, light-as-air creation started off as an Americanized version of something a bit more refined (poke cake after all is not too far removed from Mexican tres leches cake or the French syrup-soaked genoise), but then found itself mixing with the wrong crowd (Betty Crocker) and took the unfortunate turn to become the boxed cake mix, Jell-O pudding, and whipped-topping disaster it has turned into.

Food Librarian Chocolate-Caramel-Banana Upside-Down Cake The upside-down cake is a big favorite of mine. After the Bundt, of course. Chocolate Mousse This is a serious dessert mousse, friends. A chocolate experience so rich, velvety and decadent, a few tablespoons is really all that any one person needs. I usually chuckle when I watch Mrs. Olive Oil and Whiskey Carrot Cake Making Ursula's birthday cake is always an exercise in balance. I learned my lesson big time last year when she asked for a rainbow cake and I decided to take the opportunity of her turning six, combined with the fact that the rainbow has six colors, to make her a six-layer chocolate cake frosted with a different color of the rainbow from the bottom up; red. . . orange . . . yellow. . . you get the idea. I almost didn't see life on the other side of that cake and swore I'd take it easier this year. So when a few weeks ago she said, "Mom, all I want is a carrot cake. . ."
