Creamy Caprese Pasta Sigh. It’s Monday. I know. You probably don’t have a smile on your face. That only means one thing. Mondays are for grown ups. But I have some good news! Monday just got a whole lot more tolerable. Shucks… I sort of like Monday now. So – the pasta! Am I gonna give it up or what? Creamy Caprese Pasta serves 4-6 1 pound whole wheat pasta (noodles such as penne work best) 1 cup of your favorite pasta/tomato sauce 1/3 cup heavy cream or half and half 1/3 cup freshly grated parmesan cheese + more for garnish 4 ounces fresh mozzarella, cut into cubes 1 pint of grape tomatoes (I cut some in half and left some whole) 1 bunch of fresh basil leaves Preheat oven to 350 degrees F. While pasta is cooking, heat tomato sauce over low heat in a large saucepan. Top with additional fresh basil and grated cheese. Take that Monday.

Tomato and Coconut Cassoulet | Anna Jones This delicious recipe brings together so many of my favourite things. Sticky roasted tomatoes, the soothing creaminess of coconut milk and sweet little white beans, topped with a crust of sourdough bread. Don’t be put off by the coconut milk – it adds a gentle creamy note and brings everything together (the rest can be frozen and used in a curry another day). If fresh tomatoes are not at their best, a second tin of chopped tomatoes will do just fine. In the winter I swap the basil for some thyme too. I like to cook my own beans, but I sometimes use a decent jar of Spanish cooked beans – tinned will work too, but I find the jarred ones are cooked with more care. I love sourdough bread. Preheat the oven to 200°C/fan 180°C/gas 6. First heat an ovenproof pan on a medium heat and add a slosh of olive oil. Scatter over the fresh tomatoes, followed by the basil, then tear the slices of bread into chunks and push them into the gaps between the tomatoes. Image: Brian W Ferry

How to Make Crêpes Without a Crêperie A brief tutorial on how to make crêpes at home, no crêperie required. Just you, your stove and a bit of batter and you’ll have a plate full of thin pancakes in no time at all. I’ve always wanted to live abroad, even if just for a short time. While the dream of leaving and exploring was there, the reality was and is that I remain fully rooted in the Midwest. In college I was a single parent. In order to declare my Spanish major, I had to get the mandatory study abroad waived. Rather than live somewhere new and explore, I sat in my apartment and cooked, dreaming of leaving. To the eggs and milk, add in flour, melted butter and a bit of salt. When it’s time to cook, heat a pan with rounded edges over medium-high heat. Cook the crêpe for 30 seconds or so. Slide the crêpes into a flat pile and let them cool a bit while you repeat the process and make more crêpes. And that’s it. If you’re wondering, no, I still have not been to France, nor have I ventured to Australia.

Shredded Brussels Sprouts and Citrus Salad | POPSUGAR Food Do you believe in love at first sight? I do! Maybe not romantically, but rather in the case of what will please my palate. Specifically, I knew that I was destined to enter a whirlwind romance with this tart and tangy shredded kale and brussels sprouts salad as soon as I set my eyes upon it. In this case, my woman's intuition was spot-on; perfect in its original iteration (it's a favorite amongst our whole team), this salad-slaw hybrid is even better — at least better catered to my proclivities — with a few minor tweaks and additions (reflected in the recipe below). Now, before you fear that this is all bluster, I've been so smitten that I've already made it three times in the past month — a rarity for someone whose job is to test recipes . . . Notes Kumquats not in season? Ingredients Directions Whisk together the mustard, vinegar, salt, maple syrup, and olive oil in a large mixing bowl.Add the Brussels sprouts, kale, pepitas, cherries, and kumquats, and toss to coat. Serves 2 as a meal.
