What’s Burning: Risotto alle Fragole | The Palladian Traveler It’s strawberry time all across the Bel Paese, just like it is in other countries that dot our little blue planet. I don’t know about you, but I do enjoy strawberries and can’t seem to get enough of them before their short season in over. Thankfully, I’m not allergic like some poor souls, so consuming them by the basketful is not a problem for me. Piled high atop cereal in the morning; over shortcake with a dollop of whipped cream for lunch; cut in half and dropped into a glass of Prosecco for an extra sparkling, early evening aperitivo; sliced, drizzled with lemon, a dash of white wine and sprinkled with a bit of sugar for a tangy dinnertime dessert; and, bitten right off the stem and enjoyed throughout the day, I’m doing my part to make this season’s strawberries extinct. Good thing, too. Strawberries go bad. I feel like it’s a race against the clock, and I’m running out of ways to consume them. What’s next? Step-2: Finely chop the onion. Step-9: Rice is now about half cooked. Like this:

Snack Food It’s pretty hard trying to be healthy when you’re a recovering sweets-aholic. So what’s a girl to do when those (really, really) bad cravings hit?? Recipes like this one save my life! I love Greek yogurt anyway, but add in smooth peanut butter, vanilla, and mini chocolate chips, and mama’s HAPPY, y’all! Zucchini Pasta Recipe - How to Make Zucchini Pasta I've put various pasta sauces over cooked zucchini strips for years. This is certainly fine, but I've discovered some tricks for making zucchini pasta that's a little closer to actual pasta. The noodles can be more like fettuccine or linguine, depending upon how wide you cut them. I especially like this with pesto sauce as a side dish. Ingredients: ZucchiniSalt Preparation: 1. 2. 3. 4. How to Make Cauliflower Rice This post has been a long time coming. I should have posted it months and months ago but I really wanted to take photos of the process of making cauliflower “rice” and not just a dish with it in it. Finally, last week, after a discussion on my Facebook page about serving Beef Bibimbap over brown rice or cauliflower rice (recipe coming later this week!), someone mentioned making cauliflower rice in big batches and freezing it. Why hadn’t I thought to do that before? I freeze everything else right? I picked up a bunch of organic cauliflower at Trader Joe’s for a great price and set up to stock my freezer and (finally) take some in process photos. OK, so let’s talk about cauliflower “rice”. It’s zero Weight Watchers Points Plus, Low-Carb, Slow Carb, South Beach diet friendly, Paleo, Primal and just a good way to get more vegetables into your diet. The real deal is that you are not ever going to trick yourself into thinking you are eating rice. To add volume without calories.

The Braumeister's Wife: Velvety Pumpkin Stew Living with our new housemates, we both (Billy and I) benefit from being with friends who are so like-minded. Billy and Justin are record collectors, and appreciators of the arts (among other things), and Lindsey and I have our love of cooking and baking. This recipe comes from Justin's mom, who passed it on to Lindsey, and Lindsey was kind enough to show me the process and share dinner with us! It is a hearty beef stew cooked inside of a large pumpkin. It is perfectly seasonal, warms the soul, and the stew itself so velvety delicious. Velvety Pumpkin StewAdapted from Janice Schatzinger Serves: 6 Prep Time: 30 min Total Time: 3 hrs Cook's Note: This meal is a gluten-free option.GLUTEN FREE OPTION Process: 1) Prep Pumpkin. 2) Place browned meat in stew pot, and add all ingredients (reserving the 1 tbsp olive oil for outside glaze). 3) With lid on, simmer stew for 1 hour and 15 minutes, until vegetables are tender. 4) Heat oven to 325º F. 6) Carefully remove from oven and serve.

The Braumeister's Wife: Butternut Squash Chili with Polenta We had chili on the menu and I wasn't really in the mood for it. I was begrudging the heaviness of the dish and the all-too-familiar flavors. I'm strict on myself so I don't really venture off of the meal plan for financial sake, so I started rummaging around to see what other ingredients I had. I wanted to make this dish a little different from the usual beans, beef, and tomato. I also usually love corn muffins with chili but last night when I was imagining the feel in my mouth I felt that they'd be too dry. Soon though, I stumbled upon ingenious inspiration. The dish was wonderful served over polenta. If you're bored with your standard chili recipe, give this one a whirl. Butternut Squash Chili Time: 1 hr Yield: 12 cups, or 6+ servingsInspired by Epicurious' Black Bean and Espresso ChiliCook's Note: This could be an amazing vegetarian chili. Ingredients: 2 tbsp olive oil, divided 1 lb ground beef, organic if possible a pinch of chili powder, or 1/16 tsp Ingredients: 3) Turn off heat.

Cauliflower Lentil Taco Salad I was inspired to make this amazing cauliflower lentil taco salad after watching one of my favorite cooking shows – “How to Live to 100” starring my friend Jason Wrobel. If you haven’t seen this show on Cooking Channel yet, it’s a must see! Jason combines some serious nutrition knowledge, with comedy and a very endearing story line. On the show, Jason made tacos… but I decided to take his recipe another direction.
